Named after the Roman poet Ausonius in the 18th century, Château Ausone still sits on a site scattered with Roman ruins to this day. In 1976, Pascal Delbeck took control and Ausone's reputation has soared. Now with 'flying consultant' Michel Rolland at the helm of the winemaking team, the wines have become ultra-rich, stylish and veluptuous. The 2009 in particular is a wine of true immense proportions. The vintage conditions were shining on those in Saint-Émilion and the opulence of the estate is balanced by the fine structure and ripe tannins of the 09 which will see the wine further develop for the next 40 years. Unfortunatley only 1,200 cases were made and availability will be extremely limited.

The Chris Ringland Dry Grown Shiraz 2007 smells of mineral oil, leaf litter, stones and dust. Despite it's weight and density, it is lively and vivid. This is a very powerful Shiraz with great structure, it could be cellared for 20-30 years and mature gracefully.

Without a doubt one of Bordeaux's most famous vineyards, Cheval Blanc lies on the border of Pomerol and is also easily the most important estate in St-Émilion. Uniquely a blend dominated by Cabernet Franc, Cheval Blanc's wines have a powerful bouquet which is spicy and rich which is followed by fruit that is soft, mellow and liquorous. Matched only by Pétrus in the realm of vigour and concentration, Cheval's exuberance is not to be missed. With this latest release, the 2009, the wines are bordering on immortal. A blend of 60% Merlot and 40% Cabernet Franc, this super-smooth, velour textured and opulent red wine shows rambunctious flavours of raspberries, blueberries, liquorice and a smidge of menthol. Will be fascinating to watch this

Château Lafleur is a tiny 4.5-hectare Pomerol property located opposite Pétrus and producing wines of comparable quality. It is owned and run by Sylvie and Jacques Guinadeau. While the majority of great Bordeaux châteaux have changed hands over the past several generations, Château Lafleur remains in the same family hands to this day. Its vineyards are situated on the gravel-rich Pomerol plateau and adjoin those of La Fleur-Pétrus. The soils here are particularly deep and are enriched by deposits of potassium and iron. Only natural fertilisers are used and yields are painfully low, even by Pomerol standards. Lafleur's wine is typically a blend of Merlot (50%) and Cabernet Franc (50%). It is aged in small oak barrels (50% new) for 18 months. Wines from Lafleur display a spectacularly intense perfume (partly attributable to the high percentage of Cabernet Franc in the blend) and display layers and layers of concentrated, black fruits, minerals, tobacco spices and creamy liquorice on the palate. The best vintages can last for up to 50 years.

Chris Ringland's Barossa Ranges Shiraz is steeped in the Barossas post-colonial story and the high art and science of winemaking. Typically deep in colour with intense dark berry, paneforte, espresso roasted chestnut aromas, it displays a plush and concentrated palate with blackberry, mocha, paneforte spicy flavours and dense fine chocolaty tannins. Despite the opulence, flamboyance, richness and concentration, the wine has superb percussion and freshness. The wine is a small vinification of around four to five hogsheads or 1500 litres. The "unusually thick skinned" Shiraz is entirely sourced from Chris Ringland's dry-grown vineyard on the edge of the Barossa Valley, but technically in Eden Valley, along Flaxman's Valley near Randall's Hill. The wine is "painstakingly hand-made" in open fermenters and regularly pumped-over to extract colour, flavour and tannins. After draining and pressing through a traditional basket press, fermentation is completed in 100% new French oak hogsheads. A period of up to 50 months oak maturation follows to achieve optimum complexity and balance between oak and fruit. The extraordinarily high release prices (higher than Penfolds Grange), limited production and reputation make Chris Ringland Barossa Ranges Shiraz the stuff of legend.

Tasted blind at the 2012 Southwold tasting, the 2012 Ausone took more time to settle in the glass than its peers, eventually deciding upon briary, violet and cassis scentsvery floral and Margaux-like in style, not powerful but insistent. The palate is medium-bodied with fine tannin, a crisp line of acidity, blackcurrant pastille mixed with cedar and a dash of spice, the wine finally revving up towards an intense and persistent finish that almost stains the mouth with its opulence. Bouchard owns two parcels at the top and bottom of the famed walled vineyard, although presently their Clos de Vougeot Grand Cru comes from the top part, as the bottom has been pulled up. This part of this famous, 50 hectare walled vineyard tends to produce the best wine that have Grand Cru concentration and structure.

Chateau Angélus is one of the most renowned estates of Saint-Émilion, currently designated Premier Grand Cru Classé A in the most recent classification of Saint-Émilion. Located due west of the town of Saint-Émilion, the estate’s vineyards lie on a warm south-facing slope. The Grand Vin is a dense and unctuous blend of Merlot and Cabernet Franc, matured in 85-100% new French oak barriques for 18-22 months. Complex and concentrated, Chateau Angélus can appear slightly austere when young, developing greater generosity and richness with age.
