Chateau Pavie’s 2021 blend is comprised of 52% Merlot, 18% Cabernet Sauvignon, and 30% Cabernet Franc, perfectly reflecting the steep, limestone terroir of the estate. 75% of the wine is aged in new oak and the remaining 25% in one-year-old oak barrels. The wine features a full Pavie signature, with a prominent oak influence that complements the wine’s overall excellent quality.

With one of the longest and most pedigreed histories in the Medoc region, Chateau Leoville-Las-Cases has passed through the hands of some of Frances most notable and wealthiest noble families, culminating in the Las Cases family - the final royal family to hold title to the Chateau. Up until the French Revolution, after which large portions of it were sold off, it was one of the largest vineyards in Bordeaux. Today, the estate remains family owned by the Delons, of which brother Jean Hubert and sister Genevieve manage proceedings. Famed for producing a wine of structure, power, and traditional style, the 2016 vintage has earned outstandingly high praise, including a score of 100 from Andrew Caillared and a 19/20 from Jancis Robinson who praised its extraordinary vitality and energy and proclaimed it glorious to taste now.

Billecart-Salmon Cuvée Elisabeth Salmon Brut Rosé, Champagne The name Billecart-Salmon comes from the joining of two families by the marriage of Nicolas François Billecart and Elisabeth Salmon. The vintage Rosé Champagne, first created in 1988, is named in honour of co-founder Elisabeth Salmon. Incredibly opulent and rich, Château d'Yquem is widely considered the greatest sweet wine in the world. Currently owned by LVMH, this prestigious Sauternes estate is at the very top of the appellations classification, designated 1er Cru Classé Supérieur. Château dYquems 110 ha of vineyards are planted to 80% Sémillon and 20% Sauvignon Blanc. The Grand Vin is produced from only fully botrytised fruit, carefully hand-harvested over successive passes by a team of highly skilled pickers. Yields are tiny, with each vine producing just one glass of wine. Fermentation takes place in 100% new oak barriques followed by up to 36 months maturation in oak. A wine of exceptional intensity and complexity, the best vintages of Château d'Yquem are capable of aging gracefully for well over 50 years.

Dating back to Roman times, and being one of only four Saint-Émilion producers elevated to the status of Premier Grand Cru Classé, it would seem Chateau Pavie has rather a lot to live up to - and by all accounts, they are holding up their end of the bargain with this years vintage. Since coming under the consultation of renowned Bordeaux-based oenologist Michel Rolland, the Chateau has gained a reputation for vintages of higher concentration and intensity than were yielded in the past - but this years release seems to indicate this historic Chateau still has the power to surprise. Retaining the glamour and panache of recent years, the 2016 has been thrilling and charming critics thus far, with many praising its superior balance and restraint. It is expected to cellar spectacularly, suggesting further delights yet to be discovered.
