Named after the Roman poet Ausonius in the 18th century, Château Ausone still sits on a site scattered with Roman ruins to this day. In 1976, Pascal Delbeck took control and Ausone's reputation has soared. Now with 'flying consultant' Michel Rolland at the helm of the winemaking team, the wines have become ultra-rich, stylish and veluptuous. The 2009 in particular is a wine of true immense proportions. The vintage conditions were shining on those in Saint-Émilion and the opulence of the estate is balanced by the fine structure and ripe tannins of the 09 which will see the wine further develop for the next 40 years. Unfortunatley only 1,200 cases were made and availability will be extremely limited.

A very important estate in St-Émilion, Château Angélus was acquired by the de Boüard de Laforest family in 1924 and merged with the previously owned Château Mazerat. The apostrophe was dropped in 1989 and is now simply known as Angélus. The wines are characterised by a fabulous texture offered by the high component of Cabernet Franc with the plump softness added by the Merlot creating a wine of pleasing plushness.

Tasted blind at the 2012 Southwold tasting, the 2012 Ausone took more time to settle in the glass than its peers, eventually deciding upon briary, violet and cassis scentsvery floral and Margaux-like in style, not powerful but insistent. The palate is medium-bodied with fine tannin, a crisp line of acidity, blackcurrant pastille mixed with cedar and a dash of spice, the wine finally revving up towards an intense and persistent finish that almost stains the mouth with its opulence. In 1974, 100 years after the creation of Cristal, Jean-Claude Rouzaud decided to create the Cristal Rosé cuvée. To achieve this, he selected old-vine Pinot noir grapes from the finest Grand Cru vineyards at Aÿ, which are now cultivated according to biodynamic principles. The unique calcareous clay soil, which gives the grapes an exquisite minerality, enables the vines (in the best years) to attain exceptional fruit maturity, complemented by a crystalline acidity. A blend of around 55% Pinot noir and 45% Chardonnay, comprising 20% of wine matured in oak tuns, Cristal Rosé is produced using the saignée process after cold maceration. The Cristal Rosé cuvée is aged, on average, for 6 years in Louis Roederer’s cellars. The attack reveals an aromatic intensity with a remarkable fullness and the smooth, sweet flavours of white flowers, red fruits, caramel, and Tarte Tatin. The full, round, and refined texture in the initial attack, which is characteristic of the Louis Roederer Champagne House, is complemented by a winey—though not full-bodied—structure and a remarkable freshness, giving an impression of great finesse and strengthening the wine’s precision.

Another terrific success for the flagship estate (a 92-acre vineyard situated on the famed limestone and clay-rich slopes of Cote Pavie) of Chantal and Gerard Perse, the 2011 Pavie is composed of 70% Merlot, 20% Cabernet Franc and 10% Cabernet Sauvignon. 2011 may be the biggest, richest, most massive wine of the vintage. With thrilling levels of concentration, tremendous purity, high but sweet tannin, a skyscraper-like mouthfeel, and terrific intensity, depth and palate presence, this larger-than-life effort will require 5-8 years of cellaring, and should age effortlessly over the following 25-30 years.
