Every now and then, in life and in wine, we are presented with unique opportunities to express ourselves and create something truly remarkable. When these rare opportunities arise, we need to capture, nurture and develop them so that their potential is fulfilled. So when Torbreck were given the opportunity to work with one of the most famous vineyards in the Barossa Valley, they were determined to use all their experience to ensure the resulting Shiraz was truly remarkable.

The original jewel of the Tesseron collection of Cognacs; a unique blend of legendary Grande Champagne Cognacs, including many of the finest of their oldest and rarest stocks distilled in 1920s, with 5% of the blend from 1905, and lovingly aged for three generations. Remarkably pure and refined with floral, spices and green chartreuse hints. The palate is impeccably fine and balanced with a souring finish, seemingly free of spirit.

Elegant and aristocratic kaleidoscope of aromas, an abundance of fruit flavours, blackberry, mulberry and blueberry with supporting complexity of mint, eucalypt, rhubarb, Turkish delight and cinnamon. Plénitude 2 is the second life of Dom Pérignon, patiently brought to a new elevation and set on a path to eternity. After close to 15 years of slow transformation in the cellars, Dom Pérignon expands its energy and rises to an apex of essential, radiant vitality, in its state of Plénitude. Elevated to new heights, it unfurls across every dimensions – wider, deeper, longer, more intense - and gifted further with an extended longevity. With its remarkable ease and generosity, the 2004 winemaking year stands out in the history of Dom Pérignon. The vines developed with great regularity and without incident, resulting in substantial yields of large grapes. While the weather was generally anything but extreme, the vines developed with great regularity and without incident. The dry heat of the final weeks really shaped the vintage. The harvest began on September 24th, providing grapes that were both in excellent health and superbly ripe. The 2004 P2 fruit remains discreet, yet more clearly defined in this second life of the Vintage. Citrusy notes of pink grapefruit and blood oranges gently cede to figs. The additional time on the lees elevates the minerality of the vintage with the sublime maturity that is Dom Pérignon’s signature. Cocoa, mocha, roasted nuts, brioche and honey. The wine balances on the edge with immediacy and surprise, evolving between tension and weightlessness. It has an extreme, tactile precision, deep and sculptural. Established in 1836, Madame Pommery is credited with creating the first vintage brut style of Champagne in 1874, at a time when most champagnes were excessively sweetened with sugar. This revolutionary dry style set the benchmark for the rest of Champagne and it is in this spirit that the style of Pommery endures; with each cuvée displaying sublime elegance, finesse and freshness. Pommery is one of the few Champagne Houses that produces their large formats in the actual bottle in order to allow for optimal ageing.

Dom Pérignon is the most famous Champagne in the world, and for good reason. The bouquet sparkles with delicate fresh violets in a setting of white peaches. The soft delicate flavours continue while the senses are tickled by the most delicate of fine bubbles. Though this is such a fine delicate wine, the complexity is astounding, along with its length. Stunning.
