A typically elegant Yarra Cabernet. The nose shows cassis and blackberry aromas with subtle cedary oak and the palate has a silky mouthfeel with sweet berry flavours and a lovely lingering finish.

Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 when fruit was directed to other wines, nor in 1981, 1995, 2000, 2003 or 2011 (when fruit of the required style and quality was not available). The Bethany Cabernet Merlot from the Schrapel family's Bethany winery exhibits herbal blackberry and cherry flavours with subtle oak in the background. Drinking well now, but also can handle a little bit of medium term cellaring to really coax those soft, ripe tannins to infuse beautifully with its primary fruit.
