One of the most famous - as well as one of the most expensive - wines in the world, Chateau Lafite Rothschilds history dates back to 1235, by which time, it is believed, the vines were already planted and thriving. Nearly 1,000 years later it still retains the name of its then-owner Gombaud de Lafite. It wasnt until 1868 that the Rothschilds came to become the Chateaus owners, after it was sold at public auction in Paris - and it remains in their hands today. Producing an elegant Paulliac wine, Chateau Lafite is renowned for its characteristic blend of rich dark fruit with spicy, savoury and earthy notes of cassis, tobacco, and truffle. The 2016 earned sterling reviews, with James Suckling scoring it a perfect 100 and speculating on its standing as Perhaps the greatest Lafite since the legendary 1959.

Chris Ringland's Barossa Ranges Shiraz is steeped in the Barossas post-colonial story and the high art and science of winemaking. Typically deep in colour with intense dark berry, paneforte, espresso roasted chestnut aromas, it displays a plush and concentrated palate with blackberry, mocha, paneforte spicy flavours and dense fine chocolaty tannins. Despite the opulence, flamboyance, richness and concentration, the wine has superb percussion and freshness. The wine is a small vinification of around four to five hogsheads or 1500 litres. The "unusually thick skinned" Shiraz is entirely sourced from Chris Ringland's dry-grown vineyard on the edge of the Barossa Valley, but technically in Eden Valley, along Flaxman's Valley near Randall's Hill. The wine is "painstakingly hand-made" in open fermenters and regularly pumped-over to extract colour, flavour and tannins. After draining and pressing through a traditional basket press, fermentation is completed in 100% new French oak hogsheads. A period of up to 50 months oak maturation follows to achieve optimum complexity and balance between oak and fruit. The extraordinarily high release prices (higher than Penfolds Grange), limited production and reputation make Chris Ringland Barossa Ranges Shiraz the stuff of legend.

Tasted blind at the 2012 Southwold tasting, the 2012 Ausone took more time to settle in the glass than its peers, eventually deciding upon briary, violet and cassis scentsvery floral and Margaux-like in style, not powerful but insistent. The palate is medium-bodied with fine tannin, a crisp line of acidity, blackcurrant pastille mixed with cedar and a dash of spice, the wine finally revving up towards an intense and persistent finish that almost stains the mouth with its opulence. Simply a wine of true perfection. 2009 in Bordeaux has bestowed many a Châteaux with a wine for the ages and in iconic estates like Château Haut-Brion, the wines have been lifted to 'nirvana-ish' levels. One wouldn't be adverse to simply sitting on the nose of this wine for hours without having a want to taste it such is the complexity and aromatic waves that are present. In the mouth though, this Pessac-Léognan boasts flavours of cigar, raspberries, plums, figs and blueberries with a finish that seems to go on for decades. Breathtakingly stunning.

PENFOLDS Bin 707 (Gift Boxed) Cabernet Sauvignon, South Australia

Château la Mission Haut-Brion is on uniquely stony soil in the Pessac-Léognan appellation close to the city of Bordeaux. It is a Cru Classé in the Graves Classification of 1953. The 22.5 hectare red wine vineyard is planted to Cabernet Sauvignon (46%), Merlot (44%) and Cabernet Franc (10%). The chateau wine is vinified in large (180hl) temperature-controlled, stainless steel vats and aged in 100% new French oak for an average of 22 months. Annual production is 6000-7000 dozen. The famous white wine of the chateau comes from 3.5 ha planted to Semillon (62%) and Sauvignon Blanc (38%). Overall planting density is 10,000 vines per hectare (red) and 8000 vines per hectare (white). Since 1983, under the ownership of Domaine Clarence Dillon (which also owns the neighbouring Chateau Haut Brion), the entire estate has been renovated vineyards, winemaking facilities and the chateau itself. The property got its name in the 1600s when it was owned by the Catholic Church.

Now this half bottle is handy if you wish to toast yourself. Pol Roger is one of the world's power house champagne houses. Famously quoted by the likes of Winston Churchill and the champagne of choice for Her Majesty the Queen. An equal blend of chardonnay, pinot noir and pinot meunier, with addition of 20% reserve wines. It is impressively fresh and vivacious with more depth than most aperitif styles.

Château Latour is the epitome of power and bold concentration that is Pauillac. With a high proportion of Cabernet Sauvignon, the brilliant close knit tannin complimenting the vibrant cassis driven fruit is something to behold. It is often said that buyers of Latour worry about the wines they purchase will outlive them quite considerably such is the pedigree of such a wine. This is a definite concern for the 2009 vintage which is being reported as being the very best in living memory. The wine itself is a masterclass in concentration and power only with a robust and joyful front and mid-palate. Notes of blackberry and dark plum dance along with secondary characters of subtle oak and pencil shavings. A rambunctuous back palate that is almost thick and viscous that is truly forboding.
