An outstanding Cotes de Provence, very elegant, structured and aromatic - the best companion for warm summer nights. On the nose, it smells of fruit, English sweets and redcurrants. On the palate it is fresh and subtle. Overall, it is a structured and aromatic wine best enjoyed as an apertif due to its freshness.

Mechanical harvest at the end of september / beginning of october. Cold maceration prior to the fermentation according the quality of the grape. Slow alcoholic fermentation with temperature regulation. Pumping over 2 to 3 times a day then delestage. Smooth maceration during 3 weeks at 22 Celsius degrees. Ageing in cement vats with wooden dominos.

Soil of sand - Subsoil of sandy clay - East / East-South sun exposure - 28-year-old vines.

The Holy Trinity is a richly flavoured and elegantly structured GSM that continues the long and lauded heritage for this traditional blend in the Barossa Valley. The nose is awash with ripe raspberries, plums and sweet spices of vanilla. The full-bodied wine is filled with vibrant flavours of fresh red fruits and vanilla, complemented by fine and ripe tannins that run the length of the palate. Naturally fermented and raised in a mix of the family's ancient concrete vats and steel, the fruit purity gives you insight into this great vintage with a lifted fragrance of market-fresh berries, lilac and cherrystone fruit. In the mouth it has a fleshy, juicy texture and bright, mouth-watering freshness.
