'Black Label' Cabernet Sauvignon, which was first vintaged in 1954, has evolved markedly over the decades. It is arguably Australia's most recognised Cabernet Sauvignon, and has more than any other, helped define Coonawarra. The wine is matured in new and seasoned French oak for 12 to 18 months. A classic Coonawarra Cabernet with pristine dark berry/ cassis aromas, fine grained tannins and underlying savoury nuances, it develops into a rich, chocolaty wine with age. In a super vintage, this wine can look astonishingly like a 2nd or 3rd growth Bordeaux with its pure cassis aromas and cedary complexity. Rich purple/red with a vibrant purple rim. Distinctly Margaret River; driven by aromas of blackberry, plum, bay leaf and a touch of black olive. The Merlot and Malbec add texture, balance, length and a luxurious fragrance to create a seamless and unique red. A dry, warm season was punctuated with a tropical rain event in January. This pushed back harvest and allowed for better balance during ripening. The resultant fruit had wonderful thick skins, incredible concentration and excellent varietal identity. The Cabernet was harvested late-morning, to ensure the fruit reached the winery warm to ensure a healthy, even fermentation. The Merlot and Malbec fruit was harvested during the cool of the early morning so it could be cold soaked on skins for 5 days prior to fermentation. The selectively harvested fruit was fermented over 10 days, with the Merlot and Malbec undergoing partial wild fermentation. The Cabernet remained on skins for 20 days to ensure a beautiful, vibrant colour. All elements were then matured in French oak for up to 15 months. Each individual barrel was assessed to determine which were included in the final blend.

BLEASDALE VINEYARD Frank Potts Cabernet Blend, Langhorne Creek Bleasdale, the first winery in Langhorne Creek (1850), celebrates founder Frank Potts with this Flagship Series Cabernet-led blend filled out with Malbec and some or all of Merlot, Cabernet Franc and Petit Verdot, depending on the vintage. The wine typically has aromas of red berry and darker fruits with plum, violet and black olive notes. These characters continue on to the palate supported by nutty, spicy oak plus a hint of vanilla. Components are de-stemmed and crushed to open fermenters with the Malbec fermented as whole berries. After up to 14 days on skins post-fermentation the wine is transferred to French oak puncheons and hogsheads (about 30% new) for 12 months maturation.

Cullen, world famous for their Diana Madeline Cabernet Merlot, have introduced another Cab Merlot, a distinguished offshoot of the Langton's classified Diana Madeline. Majority Cabernet Sauvignon blended with Merlot and touch of Petit Verdot gives the wine a luscious, bright cherry flavour with red berries playing their part. Aged in French oak, 40% of which was new, for one year. Delicious to serve with veal, lamb or beef today, but will also reward up to 10 years in the cellar.

FRASER GALLOP ESTATE Parterre Cabernet, Margaret River

Beautiful fruit sourced from Mount Barker has gone into this excellent stylish and elegant cabernet. Deep, dark and inky; a complex black olive bouquet, with a very rich, powerful and heady mix of cassis, cedar and a little violet thrown in for good measure. Excellent firm structure threads through the controlled intense and balanced palate. A little astringency on the finish. Plenty of blackcurrant and savoury plum flavours with a touch of cedary oak. Cellar 6 years.

'There's some pretty exciting wine coming from the Frankland River region in Great Southern. Not only are there some fine wineries and winemakers in the region, the climate seems to be well suited to growing premium wines. Not a bad combination, in my view. The establishment up the road in Margaret River should be very proud to see another WA region making such fantastic wines, but it should also be wary of complacency. Singlefile has been on my radar for a while and it seldom puts a foot wrong. This cabernet from the Riversdale Vineyard is further proof of its credentials. It's got just the right amount of fruit, balanced with some more complex savoury characters and a palate that has the tension between tannin, acid and fruit in complete harmony. The colour is medium density and purple edged, the aroma is of cedar and spicy cassis Cabernet and the earthy terroir character of the Whalebone Vineyard. The Shiraz plays a role in filling out the middle palate. The core of the wine is sweet but the finish is of gentle savoury tannin.The fruit flavours are sweet at the core but the wine retains the elegance, savory balance and refined but determined tannins, which are hallmarks of the Whalebone terroir.
