100 Year Old VINES SHIRAZ

The Barossa is home to some of the world’s oldest ungrafted Shiraz vines. The vines were planted in a pre-mechanized and pre-irrigation era where site selection was everything. Dry grown as bush vines with only the best soils, vine material and sites surviving the first years, and only the absolute pinnacle surviving the 100 years thereafter. The low-yielding ‘Centenarian’ vines, noted for their intensity of flavour, were planted more than a century ago around the time construction of the Château itself began. The select parcels are hand-picked and fermented in small open fermenters with hand plunging four times daily before careful basket pressing to extract tannin and colour. Izway Don Shiraz

The 2021 Don Shiraz benefited from the 2020/2021 growing season's respite from previous hot and dry conditions, with abundant winter rain leading to healthy vineyards and slightly above-average crop sets. Despite a dry summer, early canopy growth sustained the fruit, which developed flavor and ripeness early, allowing for harvest with lower sugar and higher natural acidity. The fruit arrived in perfect condition, and the resulting wines from this vintage are noted for their freshness, depth, and personality, marking 2021 as a standout year. Vinification included a natural soak followed by a week of natural fermentation, with careful extraction methods employed throughout. Post-fermentation, the wine was basket-pressed and underwent malolactic fermentation in oak. The 2021 Don Shiraz opens with a quiet assertiveness, revealing earthy and spicy notes indicative of a cooler harvest. As it unwinds, powerful aromas of red berries, leather, and dark chocolate emerge. The palate is refined and balanced, with assertive tannins, crisp acidity, and restrained opulence. The true depth and complexity of this vintage will unfold over time, promising a remarkable wine experience. Alc. 14.8%

Penfolds Magill Shiraz

The single vineyard Magill Estate Shiraz is intrinsically linked to Penfolds beginnings. Sourced from the Magill vineyard on the edge of Adelaide’s eastern suburbs (just eight kilometres from the city’s CBD), fruit is crushed, fermented and matured on-site at the original Penfolds Magill Estate Winery, established in 1844. Magill Estate Shiraz, first produced in 1983, is an elegant, medium-weight style with velvety texture and fine tannins, matured in both French and American oak. It is a sleek, contemporary wine, yet crafted the original way: hand-picked, vinified in open fermenters and then basket pressed to complete fermentation in barrel.
