The 2021 Pierro VR Cabernet Sauvignon is sourced from mature vines planted in the celebrated Willyabrup subregion, where maritime influence and gravelly loam soils create ideal conditions for Cabernet Sauvignon of concentration and balance. “VR,” meaning Vieilles Réserves, signifies the estate’s most select parcels and oldest vineyard material, reserved for wines of exceptional quality and ageing potential. Crafted by Michael Dhillon, the wine reflects a meticulous and low-intervention approach that prioritises vineyard expression, textural refinement and longevity. The 2021 vintage delivered excellent growing conditions in Margaret River, producing fruit with intense flavour definition, natural acidity and finely structured tannins. In the glass, the wine reveals layered blackcurrant and dark plum fruit intertwined with cedar, graphite, dried herbs and subtle earthy complexity. Extended maturation in high-quality French oak contributes polish and structure while allowing the purity of the fruit to remain central. Morris Rutherglen Muscat Barrel Single Malt Australian Whisky

Creamy mouthfeel packed full of rich dark fruits and sweet malt notes, which give way to sweet vanilla and cocoa interspersed with cinnamon spice. The whisky is matured in a combination of French and American oak ex-wine barrels plus finished in rare Morris Muscat barrels, previously used to create multi-award winning Muscat. Four Pillars Navy Strength Gin

Four Pillars Navy Strength is a gin very much in the style of the Rare Dry Gin but with the volume turned up slightly beyond 11. At 58.8% ABV the gin can support some more robust and interesting botanicals, so there are three new botanicals that are both new (and fresh), including fresh turmeric and ginger. Together they have heightened the spiciness of the gin, and the turmeric in particular has added weight and a lovely earthiness to the palate. Also in the botanical basket about half the normal oranges have been replaced with some explosive native finger limes, grown in Byron Bay. They have an intensity of flavour and acid that is almost impossible to believe, and in the basket they help the gin attain super citrus notes and lovely high-toned freshness.
