CREDARO 1000 Crowns Chardonnay, Margaret River The Credaro family, originally from northern Italy, settled in Margaret River in 1922. Brothers Cesaro and Olympio worked in agriculture and the timber industry and helped build the regions first bridges, railways and major roads. The family also made wine every year for themselves and their neighbours. Commercial involvement in the wine industry had to wait until the 1980s, when the Credaros began supplying other established Margaret River wineries. In 2019 the family owned and/or managed 110ha of vineyard over five sites across the region and built a 1200-tonne winery near Yallingup in northern Margaret River, in 2003. 1000 crowns (nominally $500) was the Credaro familys original investment and the name is today applied to their flagship wines. The 1000 Crowns Chardonnay typically shows fragrant white peach and citrus aromas with pear and nougat nuances. The palate is rich with flavours of stonefruits, grapefruit and citrus blossom complemented by a creamy texture from lees influence. A fine acid line provides a mineral framework and fruit flavours generally linger through a long, flavoursome finish.

Many of us wine drinkers have a soft spot for Chablis. Its with great reason too, given our climate and affi nity with seafood. A little over two months ago, we were thrilled when this wine hit our shores for the first time following a selective buying trip. Once again, it showcased its undisputed quality and notoriety in our tasting sessions. Established in 1850, this small family owned domain is the proven choice of so many when it comes to great Chablis. The estate comprises a mere 45 hectares of vines scattered throughout the region, grown on the famous Kimmeridgian limestone soils. Textbook in expression and style, super fi ne and elegant, this 2013 has perfectly poised, piercing acidity. This drives superb length of flavour on the featherweight light palate. Is there a better oyster wine?

The wine shows an amazing length of flavor and mouthfeel with strong, clean acid on the finish and some secondary characters derived from the slight solids ferment. A great example of Hunter chardonnay with its the citrus/acid backbone, which is a benefit of no malolactic fermentation.

Customers invariably ask: "What's Blanc de Blancs Champagne and what makes it so special?" The Champagne region grows three grapes, two red – Pinot Noir and Pinot Meunier – and one white ¬– Chardonnay. Blanc de Blancs is made only from Chardonnay and, as Hugh Johnson says, it therefore has "great grace and less weight than traditional Champagne". Laithwaite's is a tip-top example which for years has been expertly created for us by superb cellars in Avize, one of Champagne's finest villages. This particular cuvée is 100% Premier Cru vineyards and was matured for 30 months before release – double the required minimum – to ensure a really luxurious character. Showing complex white blossom, citrus and toasted brioche notes, it has great finesse, a very fine mousse, and the perfect amount of acidity to cut through a range of delicious canapés such as velvety chicken or duck liver parfait.

Veuve Clicquot Yellow Label is one of the most popular and recognisable Champagnes throughout the world. With its distinctive yellow label, Veuve Clicquot is the enduring homage to the great Madame Barbe-Nicole Clicquot. Under Madame Clicquot's guidance, this famous Champagne house became a global phenomenon and a continued success story. A Champagne from the fuller-bodied school with flavours of buttered toast, brioche and biscuit to complement the ever present fine acidity and flavour length that is a trademark. Fruit for this wine is sourced from nine rows of P58 clone chardonnay planted on East West rows directly outside the winery doors. Once harvested the fruit was whole bunch pressed to French oak barriques (50% new) with Indigenous yeast fermenting the un-clarified juice. Barrel maturation took place on lees over the next ten months during which the chardonnay was stirred fortnightly.
