The house was founded as Pommery & Greno in 1858 by Alexandre Louis Pommery and Narcisse Greno. Under the guidance of Alexandre's widow, Louise Pommery, the house grew into one of the largest Champagne houses and to this day produce elegant and complex Champagne's.

Champagne of this quality is amazing. Perrier-Jouët Grand Brut is vibrant with crisp green apple and citrus flavours on the palate. A perfect balance between the acidity and the delicate bubbles, giving it an amazing length.

The wine shows an amazing length of flavor and mouthfeel with strong, clean acid on the finish and some secondary characters derived from the slight solids ferment. A great example of Hunter chardonnay with its the citrus/acid backbone, which is a benefit of no malolactic fermentation.

A fine-boned Chardonnay that reflects vintage conditions and the character of a unique vineyard site purchased by Shaw + Smith in 2012. Inaugural vintage: 2014. Planted in 1999, the vineyard has east and west facing aspects and reaches 500 meters above sea level. The soil is brown loam over clay with some broken shale and stone on the ridges. The wine is100% hand-picked and whole-bunch pressed, then fermented and matured on lees in 500-litre French oak puncheons (30% new) for 9 months.

Moët & Chandon Brut Impérial, with its perfect balance of Pinot Noir, Chardonnay and Pinot Meunier has become one of the world's most-loved Champagnes. 'Moet' is characterised by bright fruitiness and elegant maturity. The palate reveals subtle pear, citrus and brioche notes. G.H.MUMM Millésimé 2006 is a luminous and bright golden yellow in colour with fine, lingering bubbles.The nose reveals a superbly complex wine: notes of apple and pear, with yellow fruit such as apricot and mirabelleplum. It then develops aromas of dried fruit and nuts with hints of pastry. After a strong attack, the wine developsgradually. It then reveals the increasingly perceptible presence of Pinot Noir, giving an unctuousness to the structure before unfolding into a long, precise finish.

As Australian Chardonnay continues its re-emergence, Vasse Felix Heytesbury is firmly leading the charge with its complex, modern style that has seen the winemaking team take home a cabinet full of trophies and gold medals in recent years. 100% wild yeast fermented and matured in French oak for only nine months, there is a power and persistence that is unmistakable. A flavour cavalcade of matchstick, citrus, white peach and grapefruit alongside a subtle toasty, nutty aspect from the sublime oak regime. The finish of this remarkable example will leave you in no doubt to this wines pedigree and ageability. Sheer classic.

Fruit for this wine is sourced from nine rows of P58 clone chardonnay planted on East West rows directly outside the winery doors. Once harvested the fruit was whole bunch pressed to French oak barriques (50% new) with Indigenous yeast fermenting the un-clarified juice. Barrel maturation took place on lees over the next ten months during which the chardonnay was stirred fortnightly.
