Customers invariably ask: "What's Blanc de Blancs Champagne and what makes it so special?" The Champagne region grows three grapes, two red – Pinot Noir and Pinot Meunier – and one white ¬– Chardonnay. Blanc de Blancs is made only from Chardonnay and, as Hugh Johnson says, it therefore has "great grace and less weight than traditional Champagne". Laithwaite's is a tip-top example which for years has been expertly created for us by superb cellars in Avize, one of Champagne's finest villages. This particular cuvée is 100% Premier Cru vineyards and was matured for 30 months before release – double the required minimum – to ensure a really luxurious character. Showing complex white blossom, citrus and toasted brioche notes, it has great finesse, a very fine mousse, and the perfect amount of acidity to cut through a range of delicious canapés such as velvety chicken or duck liver parfait.

Delamotte was found in 1760 and is one of the five oldest Champagne houses. Based in the Grand Cru Village of Le Mesnil-sur-Oger in the Cote des Blancs, the house is reknowned for the delicacy and elegance of their cuvees. A 100% Chardonnay from six select Grand Cru vineyards in the Cotes des Blancs: Le Mesnil-sur-Oger brings fine acidity, minerality, and saline characters; Avize brings balance and structure; Oger brings generosity and fruit expression; Cramant brings minerality and smoky complexity, Chouilly structure and length, and Oiry the texture, body, and roundness. With six years of ageing on lees, this cuvee is characterised by its pure, direct, and intense flavours of citrus flavours, saline notes, and complex notes of freshly baked brioche. This Champagne will easily enhance a range of dishes, from oysters to beef tartare, and will comfortably age for another decade.

Gary Farr is still one of Victoria's true Chardonnay maestro's and his Chardonnay By Farr is another example. Taken from the original By Farr vineyard, this is a clearly a wine of true clarity and finesse. Flavours of melon and hints of spice with wonderful oak integration mean this wine is simply delicious upon release, but handle some careful medium-term cellaring.

Fresh and flavoursome, Moët & Chandon Ice Impérial is perfect for spritzing up a sunny afternoon or adding an elegant tone to any dinner party. Flavours of fresh citrus and stone fruits with ravishing acidity and length.

Joseph Perrier Cuvée Royale is one of the standout Champagne's from the 2002 vintage. Conditions in Champagne were simply perfect during the growing and harvest seasons and has resulted in a vintage Champagne with complex bread, toast and honeyed flavours with a long and creamy finish. Divine.

Consisting of 75% Pinot Noir and 25% Chardonnay, this elegant rose has both power and style. Rich mouthfeel complemented by a lively line of acid that goes on and on and on.

With 40% of reserve wines, the Charles Heidsieck Brut Reserve Champagne offers complexity, voluptuous on the nose with notes of freshly baked brioche and the richness of roasted coffee beans. This is a deliciously sophisticated wine that finishes dry with a velvet texture, depth and long-lasting bubbles on the palate.

The distinctive, geologically complex terroir of Chavot and the Coteaux Sud d'Épernay in general is very different to the Côte des Blancs and Montagne de Reims areas where our other growers are based, and the style of wine is creamier and with more fruit.

The wine comes from the purest grape juice and it alone allows Laurent-Perrier to craft 'La Cuvée', a champagne of great finesse and a beautiful freshness obtained after a long ageing process in our cellars. Laurent-Perriers style and personality are defined by its very high proportion of Chardonnay.
