Certified Organic grapes were handpicked in the cool early morning and crushed, chilled, and pressed on arrival at the winery. The juice was then transferred into French oak barrels for fermentation. Once fermentation was completed the barrels were stirred weekly, suspending the yeast lees giving the wine extra texture and suppleness. This wine, a Piebald, meaning black and white, is a co-fermentation of the blackest Syrah grapes, with a hatful of the purest white Viognier. Deep in colour, the wine is almost black, yet is also vibrant and bright. The nose is perfumed with apricots, spice and liquorice; a pretty, fragrant wine with a sweet juice and velvety palate. The finish is elegant with savoury spice and a fine tannin length and persistence.

Shingleback owners John & Kym Davey produce a lovely, rich McLaren Vale Shiraz here with aromas of ripe cherry fruit, milk chocolate and licorice. Plush and sweet fruited on the palate, the tannins are soft and supple. Wonderful drinking.

Deep Woods Hillside Chardonnay exhibits lifted nectarine and white blossom characters. A suggestion of cedar like oak frames the generous stone fruit characters and complex chipped shell minerality. The palate is clean and lively with tremendous depth of ripe stone-fruit flavour nuanced by cashew notes. Bright citrusy acidity ensures and long and seamless finish providing enhanced structure and length.
