These Willamette variety raspberries are grown in the deep south of Tasmanian, in the foot hills of our world heritage Mount Field National Park at the Westerway Raspberry Farm, owned and operated by the Clark family for over 25 years. These raspberries, originally from the north-west of USA are a sweet and juicy variety, great for jams, juicing and of course gin ;). Firstly the spice hightened Botanic australis recipe with extra cinnamon myrtle, ginger, Bunya nut and Riberry which has been barrel aged for 12 months in reconditioned ex red wine casks is macerated on our Mt. Uncle home made christmas puds. Once finished the left over pud is then distilled and waked back in a abarrel to become nexts years tasty addition to the Botanic Australis range. Sweet christmas pudding and spice notes. Ripe dried fruits cinnamon and alspice on the tounge and rich cristmas pudding notes on the nose. Perfect for any festive season tipple.

“I really thought I had an original idea, alas, no. Saffron gin has been done before in France. I think the Brocken Specter Summer Gin is the first Australian saffron gin we use 100% Tasmanian grown saffron and never add any coloring. For the base we combine 16 aromatics including juniper, coriander seed, lemon myrtle, strawberry gum, star anise and vanilla bean. This mix is added to a grape based spirit and left over night. This spirit/aromatic base re-distilled, after at full strength we add the saffron. After a few days the saffron stamens are completely white and simply strained out. The gin is gluten free, vegan and unfiltered. Try a summer gin with good tonic, fresh chilies and thyme!”
