Old vines Shiraz grapes were used in the making of this beautifully crafted Torbreck The Struie Shiraz. With the blend of two great regions, Eden and Barossa Valley, the flavours and aromas intensified yet still worked harmoniously together. A more elegant exotic floral aromas are supported by the more brooding notes of tar and chocolate on the nose. Combined with luscious flavours of stew dark fruits and structured tannins, this wine has bold and silky smooth finish.

Yalumba has always had a policy of keeping exceptional grape parcels or batches of wine separate, when possible, regardless of quantity. The Steeple Vineyard Shiraz is a special example. Sourced from antique vines within the Yalumba Steeple Vineyard on the Barossa Valley floor, this Shiraz is a strong expression of terroir, with a dynamic scent, energetic freshness and cooling, earthy tannins. Chateau Pape Clement located in Pessac Léognan is part of Bernard Magrezs stable of estates. The 32.5 ha vineyard is planted to Cabernet Sauvignon and Merlot on gravel, sandy and clay soils. Fruit is handpicked and hand sorted before undergoing a cool pre-ferment maceration and whole berry fermentation in wooden vats. Each parcel is fermented separately. The wines are manually punched down and run off into 100% new French oak barriques where they mature for 18-20 months. Bernard Magrez is credited with turning around quality at the Chateau, including introducing rigourous vineyard selection and implementing state-of-the art winemaking. As a result, Chateau Pape Clement is now considered one of the finest producers in Pessac-Léognan.

La Dame de Montrose, first vintage 1983, is the highly-regarded second wine of Chateau Montrose, the St. Estephe deuxième cru (second growth). Montrose has a little more than 90ha of vines, the entire site overlooking the Gironde. The vineyard is 60% Cabernet Sauvignon, 32% Merlot, 6% Cabernet Franc and 2% Petit Verdot. Around 50% (or less) of the crop goes to make the grand vin and around 30% (or more) goes into La Dame de Montrose. (The rest is used elsewhere or sold in bulk.) In good years La Dame de Montrose is considered a bargain, in the best years it stands alone as a great wine. The Dame de Montrose herself is the late Yvonne Charmolüe, who ran the estate from 1944 to 1960.

St Henri is a time-honoured and alternative expression of shiraz, and an intriguing counterpoint to Grange. It is unusual amongst high quality Australian red wines as it does not rely on any new oak. Released for the first time by Penfolds in the early 1950s (first commercial vintage 1957), it gained a new lease of life in the 1990s as its quality and distinctive style became better understood. Proudly, a wine style that hasnt succumbed to the dictates of fashion or commerce. St Henri is rich and plush when young, gaining soft, earthy, mocha-like characters with age. It is matured in an assortment of old large vats that allow the wine to develop, imparting minimal, if any oak character. Although a small proportion of cabernet may sneak into the blend, the focal point for St Henri remains shiraz.

Distinctively "cabernet", and clinging to its youth tenaciously, the 2015 Bin 407 is only just starting to show some evolution. The elegant tannins are beginning to resolve, the dense, dark fruit softening - the layers melding. Cassis, black currant, mocha and mint flavours shine through. There's lots more to this multi-layered wine for you to discover. It's exciting to drink top cabernets like this, but no need to hurry - it's a brilliant drink now, and will continue to improve for ten years.
