The Honeybomb Semillon Sauvignon Blanc is a punchy and textural expression of a Margaret River SSB. It is very much in the Devil's Lair playground, experimenting with a small percentage of oak and lees work to add complexity whilst respecting varietal aromatics and purity. Defined by a mineral edge (quartz comes to mind) and muddled lime with a zesty line and salivating acidity layered with elements of starfruit and nashi pear like texture captured from a small barrel ferment component.Devil’s Lair senior winemaker Ben Miller’s enthusiasm for wine is extraordinary. Growing up in the Hunter Valley, he was encouraged to be adventurous, curious and hard working. A classically racy, punchy Margaret River SBS with exuberant fruit and freshness. The Semillon comes from 20 year old vines rooted in the North Block gravels and sees a small amount (13 per cent) of barrel fermentation. This component supplies some texture to complement the wine's crunchy lime, lemongrass, grapefruit and herbal notes.
