The 2014 Cuvee d'Elevage Cabernet is an outstanding expression of a northern Margaret River Cabernet. Seductive from the first sniff. Certainly got me interested. Remarkably soft and supple Cabernet with almost cashmere fine tannins and an effortlessly smooth and long palate structure. Slightly chalky tannins add some balance and the follow though to the finish is extravagant and stylish.

A wonderfully elegant yet flavorsome wine bursting with red and black currants, cherry plum fruit leather with subtle undertones of violet, aniseed and subtle cigar box aromas. The fruit was harvested in Mid-April when the skin tannins are ripe and the flavours are bold. The whole berries add some spice and complexity to the wine. Aromas of glazed plums, cloves and cracked peppercorns give way to a rich palate with hints of citrus blossom, oyster shell and vanilla pod compliment a long and complex finish, further exhibiting a bright fruit core and pure longevity of pristine tannin. The fruit is de-stemmed with no crushing of the berries so that we begin whole berry fermentation. The whole berries seem to add some spice and complexity to the wine. Our Shiraz seems to enjoy relatively cool ferments, plenty of aeration and gentle treatment. The wine is gently pressed of skins, near dryness, based on taste.The bubbly purple wine finishes its fermentation in the presence of mainly French oak, with the smallest portion of American oak. The wine is racked when it has finished its malolactic fermentation, and then once or twice more over the season based on its individual requirements. The Malbec is barrel fermented in 500 litre puncheons.Ø AROMA Lifted red berry and cedarØ PALATE Elegant natural tannins, some floral qualities over plum and gravelly depth. A fine balanced wine, with a long palate that shows finesse.Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Elegant and fragrant, this wine is all about vibrancy and fruit purity. Blackcurrant and herbal notes, bay leaf, violet florals and red-fruited freshness. It's layered and complex with a lovely mineral note running through, and oh-so-pure. Delightful drinking. Dry grown from our single vineyard organic plot in Yallingup. Hand harvest, foot & hand stomped into the terracotta pots. Hand plunged daily during wild fermentation then left on skins for six months with native malo. Basket pressed on a cold wintery day back to the amphora for maturation for three months. Hand bottled direct from the pots, sealed under cork with a wax top. No fining, no adds, no filtration, no pumping, no gas, only good old candle power & knuckle grease. Plus very minimal sulphur at the bottling process - this is to ensure no bottle variation & to eliminate any oxygen pick up.

A welcome addition to Jo Perry's unique Clayface range here. Shiraz, made naturally without any additions. The fruit is hand-picked from Jo's organic vineyard in Yungarra. Jo then ages it in her much-loved amphora, preserving the natural vibrancy and spice that Shiraz/Syrah, when picked nice and early, can show from this region. It's a svelt, slippery and spicy Shiraz that has great energy and freshness. Also, being sulphur-free, it has a little wildness to it making it a unique and delightful experience to drink.

Medium crimson red with a slight purple edge. A generous combination of lifted forest berry fruits, cassis, and dark cherry fragrances upfront with underlying black olive and blackcurrant nuances. Subtle sweet cinnamon oak spice, violets and savoury dried herbs adds a further depth of complexity. Medium to full bodied wine with elegant, well integrated red berry fruit flavours fill the palate followed by a succulent, fleshy but firm tannin structure. Juicy red berry fruit flavours persist endlessly with a hint of dark chocolate mocha on the finish.

Vibrant, deep purple/black with a dense purple rim. A potently perfumed, layered wine that showcases the essence and class of Margaret River Cabernet Sauvignon. Cassis, black olive and dried herb with tobacco leaf, redcurrant and floral notes. An underlying nuance of cedar and lightly roasted spices from maturation in well-seasoned French oak hogsheads (300L). The palate is seamless and fine with tremendous length and intensity of flavour. It has a lovely savoury tannin grip that Margaret River Cabernet Sauvignon is renowned for.
