A truly unique and distinguished distillery, Glengoyne straddles the border between the Highlands and Lowlands regions in Scotland and claim to have the slowest distillation method in the country. This enables Glengoyne to produce a 21 Year old Highland Single Malt of supreme mellowness and flavour. With a definite concentrated malt base the palate is overflowing with Christmas cake, honey and dried fruit characters and all capped off with an effortless finish courtesy of the premium sherry casks used in maturation.

Uniquely located on the border that separates the Lowlands from the Highlands, Glengoyne are also unique in that this historic distillery air dry their barley rather than the accepted Scottish practice of peat smoke drying. This imparts a subtlety and grace that other whiskies do not have. The 18 Year Old Single Malt has spent 18 long years maturing ex Sherry casks, the majority of which are first-fill. This patience has borne a whisky that shows spicy vanilla fruit, ripe apples and a rich, luxurious mouthfeel. An exceptional blend of reserve stocks of Grande Champagne Cognac, distilled in the mid 1970s and matured in old casks. On the nose there are delicate fragrances of spice, sesame seed, oak, baked pears and brown sugar. The palate is deep and viscous with moderately sweet notes of ripe pear, almond, oloroso sherry, orange peel, and leatherwood honey. The finish has hints of brown sugar with notes of vanilla and salt and has great persistence.

A rich and complex Scotch, finished in Caribbean Rum casks with toffee sweetness, notes of vanilla and hints of new leather. The Rum casks give the Scotch just the perfect kiss of exotic spice. Best enjoyed neat, with a splash of filtered water or over ice.

Domfrontais Calvadoss differ from those of the PaysdAuge by being made from at least 30% pears, as well as the traditional apples. This makes not only for a lighter-coloured spirit, but also one thats more feminine and elegant. This 1992 vintage Cavados has aromas of cocoa, pear, tea and jasmine. The palate is elegant and long with pear and spicy notes.

A Single cask Whisky produced only from malt spirit distilled in Scotland and matured in a fresh cream sherry oak cask. Prior to bottling, its natural strength 51% alc./vol. is reduced to 45% alc./vol. Dark amber robe with a reddish tinge. Fragrances of Sherry, flowers, vanilla, dried fruits. Mellow, and long in the mouth. A fabulous balance between sherrys warmth and the fresh flavours only barley can produce.
