Louis Roederer remains one of the last 100% independent, family-owned Champagne Houses, presided over by seventh generation Frédéric Rouzaud. Under the stewardship of Chef du Cave, Jean-Baptiste Lécaillon these past two decades, Louis Roederer has become the largest Biodynamic Domaine in Champagne with their 242 hectares located in the three most important sub-regions: Montagne de Reims (La Montagne); Vallée de la Marne (La Rivière) and Côtes des Blancs (La Côte). In March 2021, following 20 years of environmental transition, 115 hectares of the historic Louis Roederer family vineyard achieved organic certification. An extraordinary vintage which is also the year in which the Champagne region was recognised as a UNESCO World Heritage Site! 2015 followed the continental trend of that decade: a mild, wet winter and a hot, dry summer. The summer, hot and sunny, brought record-breaking temperatures and water stress. The second half of August brought some very welcome rain, giving the vines some much needed relief. Thanks to this fresh finish, the vines produced juicy, ripe and concentrated grapes. Our ambition for this vintage? To capture the concentration which is the hallmark of this spectacular vintage! A rosé created by a long, gentle infusion of Pinot noir that extracts its juicy ripeness while preserving its tremendous saline freshness. In this process, some Chardonnay juices are added to the Pinot noir maceration, to ferment together and achieve the perfect integration of the two grape varieties.

NV Billecart Salmon Brut Reserve, A satiny white mousse sits well over a straw pale gold tinged base that’s finely threaded by a steady stream of delicate bubbles. Strong yeasty baked bread characters intermingle with oily toast, cashew, citrusy honey and brioche notes. Rich yet tense and tightly knit on the finish the palate features mouthwatering flavours of baked bread, citrus, oily toast like characters and yeast lees with some roasted almonds on the dry crisp finish. Long precise aftertaste that has a lingering subtle dried nut element to it. A very dry and focused Champagne that requires some patience.

Billecart-Salmon Brut Rosé, Champagne The name Billecart-Salmon comes from the joining of two families by the marriage of Nicolas François Billecart and Elisabeth Salmon. The Mumm RSRV Lalou 2006 cuvee is a legendary champagne, blended from 100% Grand Cru wines. It is sourced exclusively from the Maison Mumm vineyards, its historic and emblematic plots. Of the 12 specific plots in the Maison Mumm vineyard, equally distributed between Pinot Noir from the Montagne de Reims and Chardonnay from the Côte des Blancs, seven were selected for the unique blend of RSRV Lalou 2006 (Les Bionnes, Les Crupots, Les Briquettes, Les Perthes, Hannepés, Les Rochers, Les Houles). These seven Grand Cru wines were previously pressed separately, then vinified one by one. In line with Maison Mumm’s uncompromising standards, a 10-year aging period and a dosage of 6 grams per liter fully reveal their complex and elegant aromas. Pure gold in colour the nose is an elegant mineral departure, opening out into sweet pastry notes. Aromas of candied lemon and pear marmalade, complemented by gourmet notes of vanilla, with hints of toast and brioche. The palate has a rounded, powerful attack. As the wine develops, it demonstrates great length on the palate, combining fullness and freshness.

Made in tribute to Madame Louise Pommery, Cuvee Louise is made from fruit sourced from Grand Cru vineyards in Avize, Cramant and Ay. The 1999 combines purity and richness of rare complexity. Aromas range from red berries, to notes of beeswax, quince and freshly dried acacia. All of them set off by a flourish of minerality that imbues this Louise with generosity and roundness.

This unique cuvee is respectfully composed of the three champenois grape varieties - Chardonnay, Pinot Noir and Pinot Meunier. Entirely vinified in oak, Sous Bois (under wood) totally masters the art of blending by renewing the ancestral spirit and savoir-faire of the original Champagnes. The nose contains defined aromatics of dry fruits and fresh citrus, coupled with finely buttered seductive notes that expresses the mature complexity linked to the vinification in oak barrels. The palate is bursting with flavours of grilled brioche, vanilla and toffee, complimenting the refreshing texture and exceptional finish.
