Choosing sites that offer the greatest varietal expression, concentration and finesse, the wine then saw maturation in French oak of sizes ranging from barriques (225L) to puncheons (500L) for 12 months. The result is a foreboding Shiraz that displays notes of blueberry, blackcurrant, aniseed and balancing earthen touch. Ideal served on its own to fully appreciate the rich and complex flavours but also at home when paired with French cutlets and slow cooked duck.

This wine, a Piebald, meaning black and white, is a co-fermentation of the blackest Syrah grapes, with a hatful of the purest white Viognier. Deep in colour, the wine is almost black, yet is also vibrant and bright. The nose is perfumed with apricots, spice and liquorice; a pretty, fragrant wine with a sweet juice and velvety palate. One of the very best Chardonnays doing the rounds from McLaren Vale due to its lighter, slightly austere nature. Citrus melon and fruit-salad aromas give this Chapel Hill Chardonnay an attractive lifted bouquet and the palate is flavoursome fresh and lively. Great drinking!

The Wolf Blass Grey Label Shiraz is an opulent concentrated and complex style with plenty of spicy fruit and a dash of chocolate. True to the style that Wolf himself made from the very beginning of this now iconic brand, this is very tasty and enjoyable now yet it has the weight and complexity to improve with cellaring.

Chapel Hill's McLaren Vale Verdelho has an intriguing and feisty array of flavours and aromatics. Kaffir lime leaf, passion fruit and honeycomb all leading into an endearing textural finish.
