The Triolet blend, first produced at this vineyard in 1987, was inspired by the white wines of Graves, Bordeaux. Each variety is picked at optimum ripeness, and is usually fermented separately. The characteristics of optimum ripeness are different for each variety. We pick the Sauvignon blanc after the strong herbaceous flavours have disappeared, the Semillon when the acid is not too harsh, and the Muscadelle when the flavour intensity peaks.

This Katherines Paddock Chardonnay combines the richness, drive and classicism of one clone with the fine-boned flinty structure and chalky notes of the other. It is stylish with the modern expression of Australian style Chardonnay: tense, taut and sulphidic. It reclaims the middle ground where body, flavour and palate weight co-exist with structure, texture and restrained acidity. This single-vineyard Chardonnay has well integrated natural acidity with rich varietal expression.

Shiraz (96%) co-fermented with small parcels of Viognier, Marsanne and Mataro aged 12 to 18 months in 50% new French oak barrels produces a wine that is perfumed and feminine with the tannins and acidity as integral to the wine as the fruit. This single vineyard, award-winning Levantine Hill Melissas Paddock Syrah, has its own inimitable characteristics of the unique site and inherent signature expression. It features a complex nose, featuring blackberry, liquorice, tar, spice and cherry oak. The resounding sophisticated palate features fine tannins leading to a long finish. There is a delicate nervy balance between savouriness and sweet fruit with an emphasis on balance and length for a resounding echo of flavour.
