A fine balanced wine, with a long palate that shows finesse.Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Rich purple/red with a vibrant purple rim. Distinctly Margaret River; driven by aromas of blackberry, plum, bay leaf and a touch of black olive. The Merlot and Malbec add texture, balance, length and a luxurious fragrance to create a seamless and unique red. A dry, warm season was punctuated with a tropical rain event in January. This pushed back harvest and allowed for better balance during ripening. The resultant fruit had wonderful thick skins, incredible concentration and excellent varietal identity. The Cabernet was harvested late-morning, to ensure the fruit reached the winery warm to ensure a healthy, even fermentation. The Merlot and Malbec fruit was harvested during the cool of the early morning so it could be cold soaked on skins for 5 days prior to fermentation. The selectively harvested fruit was fermented over 10 days, with the Merlot and Malbec undergoing partial wild fermentation. The Cabernet remained on skins for 20 days to ensure a beautiful, vibrant colour. All elements were then matured in French oak for up to 15 months. Each individual barrel was assessed to determine which were included in the final blend.

Brilliant ruby-red with purple hints. Expressive, continuous and delicate aromas of red cherries and spices. Fresh in the nose and in the palate. Supple and joyful structure where the flavours are persistent and of a light nature. Paolo Scavino owns 29 hectares entirely in the Barolo area and works on 20 Barolo historical crus located in Castiglione Falletto, Barolo, La Morra, Novello, Serralunga d'Alba, Verduno and Roddi. The Scavino family distinguishes itself from the beginning by their scrupulous care of the vineyards and passion for terroir. Their core beliefs is the supremacy of the viticulture above the oenology therefore the focus is the care of the vines in order to grow ripe and healthy grapes. In winemaking minimal and equal intervention are sought, to preserve natural diversities, terroir.

Grape variety - 100% Shiraz. Oak maturation - 40% new and 60% older French. notes. Colour - Deep red with purple hue. Aroma - Concentrated with bacon fat, pepper, lifted florals and incense. There’s an underlying meaty-gravy complexity with balanced oak, mulberry and plum. Palate - Full with a dense texture and fine grain tannins. The palate is loaded with pepper, beef gravy, potpourri, black raspberry, mulberry and plum. A complex, savoury and elegant wine that’s more Syrah than Shiraz Food matches - Seared prime beef and roasted root vegetables or Fillet of venison with wild mushrooms. Peak drinking - Drinking well now but will show further integration over the next 8 - 10 years. Viticulture - The Home Block Shiraz vineyard comprises 0.7 ha of open lyre, minimal irrigated vines planted on ironstone gravel over deep friable loam. Judicious shoot and bunch thinning is always used to maintain a very light crop which was hand picked in early March of 2021. Harvested at 12.5º Baume the fruit exhibited intensely concentrated flavour and colour. Winemaking - The hand picked fruit was harvested early in the morning and processed straight away. 5% whole bunches, including stalks were placed into the bottom of the fermenter before filling. The remaining fruit was de stemmed into the small open fermenter with heading down board, which keeps the cap fully submerged between drain and returns. After nine days of fermentation, the fruit was pressed into a blend of new and used French Burgundian barrels. Storage and Bottling - Maturation lasted 11 months before the wine was carefully blended and bottled. Bottled under screw cap to retain freshness in a premium Burgundy bottle. Held in bottle for approximately 1 year prior to release.

This Cabernet is pure class, showcasing all the stunning characteristics you'd expect - plum, cassis, and red berries, complemented by rich chocolate notes. Powerful yet elegant, a well balanced wine. The finish brings in bay leaf, cedary spice, and smooth, refined tannins.
