Bin 707 is a Cabernet Sauvignon reflection of Grange, intensely-flavoured fruit, completion of fermentation and maturation in new oak, expressing a Penfolds understanding of multi-vineyard, multi-region fruit sourcing. Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 when fruit was directed to other wines, nor in 1981, 1995, 2000, 2003 or 2011 (when fruit of the required style and quality was not available). Full bodied and with proven cellaring potential, Bin 707 retains a secure place among the ranks of Australias finest Cabernets.

While Chateau Latour might be proximate to the famed Leoville estate, Chateau Leoville-Las-Cases is individually distinguished for its own unique character, and regularly is called the best wine of St-Julien. Classic Las Cases wines show incredible perfume, a result of lower temperature fermentation and an adherence to around three quarters of their barrels being new oak. The 2010 is as always Cabernet Sauvignon dominant, and shows with elegance, finesse and yet a layered complexity that draws the drinker in. Potential for this wine is immense; a life of 30 to 40 years in cellar should be considered.

Early Bin 707s were typically open fermented under wax-lined header boards and matured in seasoned old oak (rather than new oak). Château l'Eglise-Clinet is a much sought after Domaine within the right bank district of Bordeaux and can be hard to come by. A majority blend of Merlot to Cabernet delivers a wine of subtlety and plushness and due to the properties long planted vines, the ageability is second to none in the region. After not pulling out vines after the 1956 frost, this Château can boast some of the oldest vine material in Pomerol and that evidence can be found in the 2003 bottle of l'Eglise-Clinet which is still ageing gracefully in the bottle even after a difficult vintage due to heat.

Oakville, California: Home to some of the most sought-after Cabernet Sauvignon in America, Napa Valley's Oakville district stretches across the center of Napa's valley floor and foothills between the Vaca and Mayacamas Mountains. Gravel soils make up the primary soil type at Château l'Evangile which is consistent with most of Bordeaux's right bank region of Pomerol. Merlot is the variety of choice in the blend with Cabernet Sauvignon to create a wine full of plushness, vibrant aromatics and smooth, lingering finish. The 2009 vintage was wonderfully kind of all of Bordeaux and Pomerol was no exception with the l'Evangile producing a wine of plushness and warmth as well as one of concentration and power. A classic Pomerol.
