The two grape varieties that make up this traditional white wine blend have found a more than suitable home in the Southern Hemisphere and in the Margaret River region. Margaret River SBS wines often display a powerfully aromatic expression of the style. Our 2021 Flying Fish Cove displays the lifted aromatics combined with a succulent and powerful palate that is so synonymous with these styles. In this vintage, we have combined the punchy and lifted aromatics of Karridale Sauvignon Blanc with the power and weight of Wilyabrup Semillon.

Howard Park Sauvignon Blanc contains a fragrant nose of snow peas and guava with a little passionfruit which is a precursor to a palate that's juicy and tight with citrus acidity. A barrel fermented component ensures that there is a level of complexity that separates it from its contemporaries.

Presenting with a pale, straw colour this wine fills your senses with fresh citrus blossom on the nose followed by crisp and delicate notes of lemon, passion fruit and peach with a hint of minerality and subtle notes of fresh, cut grass on the palate. The wine exhibits a nose with lifted aromas of passion fruit, guava and exciting tropical fruits. The palate is fine with a lovely, nervy acidity and an effortlessly long and dry finish. This single vineyard Sauvignon Blanc was fermented cool and matured over three months on lees to build complexity and palate length.

The MadFish range by traditional Margaret River producer, Howard Park, is one of great value and regionality. This Semillon Sauvignon Blanc blend is a Western Australian staple with gooseberry flavours along with real citrus zest lift and a cleansing back palate. But it is the complexity in this wine that is truly remarkable and something that isn't often seen in this blend.

As in previous years, the Orenji is equal parts Semillon and Sauvignon Blanc sourced from Yungarra vineyard and a site in Rosa Glen. Both vineyards are organically managed. The fruit is hand-harvested in the cool of the morning, and ferments on skins in open fermenters for two weeks. After another eight weeks in a cement egg, the wine is pressed to barrel and egg. It undergoes full malolactic conversion before being bottled with minimal sulphur. No fining, no filtration.
