Penfolds Bin 407 began life back in 1993 with the release of the 1990 vintage Cabernet Sauvignon. Created as a result of the availability of high quality Cabernet fruit, Bin 407 is inspired by its older brother, Bin 707. Not only offering varietal definition, but also approachability, structure and depth of flavour. The Bin 407 highlights the Penfolds approach to multi-region, multi-vineyard blending to create a Cabernet that rewards the drinker in both early and later years.

Bright plum in colour, Penfolds Bin 169 Cabernet Sauvignon displays delicate notes of mint and blackcurrant, with a more savory bouquet of semi-dried tomatoes and fruit chutney at the end. A hint of oak and spice adds extra warmth. On the palate a flavour-wheel of spearmint, milo powder, chocolate and black liquorice.

Wynns John Riddoch Cabernet Sauvignon is the icon Coonawarra Cabernet Sauvignon. Named after Coonawarra pioneer, pastoralist and parliamentarian, John Riddoch, this Cabernet Sauvignon is sourced from the very best of Wynns vast planting in Coonawarra and it only made in the years that best express Wynns strive for excellence. Arguably richer and more complex from comparable styles in the region, John Riddoch Cabernet is highly sought after and extremely limited.

The 2017 Haut-Bailly is composed of 60% Cabernet Sauvignon, 32% Merlot, 4% Cabernet Franc and 4% Petit Verdot. Very deep garnet-purple colored, it has a wonderfully spicy nose of cinnamon stick, cloves, anise and fenugreek with core of roses, warm blueberries, black forest cake and black raspberries plus hints of underbrush and iron ore. Medium to full-bodied with firm, ripe, grainy tannins, it has oodles of freshness and great finesse, continuing bright and energetic on the long, minerally finish.

As Australian Chardonnay continues its re-emergence, Vasse Felix Heytesbury is firmly leading the charge with its complex, modern style that has seen the winemaking team take home a cabinet full of trophies and gold medals in recent years. 100% wild yeast fermented and matured in French oak for only nine months, there is a power and persistence that is unmistakable. A flavour cavalcade of matchstick, citrus, white peach and grapefruit alongside a subtle toasty, nutty aspect from the sublime oak regime. The finish of this remarkable example will leave you in no doubt to this wines pedigree and ageability. Sheer classic.

Alter Ego is the second wine of Chateau Palmer and is widely considered one of the best value wines in Margaux. A fragrant and lush style, designed for earlier drinking, Alter Ego displays vibrant cassis fruit, supple tannins and a round plush mouth-feel. Maturation takes place in a 25-40% new French oak barriques for 18 months.

The nose is intense and multi-faceted. Notes of blackcurrant and cedar are interwoven into a sophisticated expression that constantly intrigues. Harmony and balance are immediately apparent in this elegant, medium to full-bodied wine. The palate is assertive yet refined, with concentrated flavours of blackcurrant, berry and olive supported by subtle cedar spice from the oak. Lynch-Bages is an iconic fifth growth of Pauillac and has the distinction of having produced the only wine that has ever been sent into space. Established in the early 1700s, the wine was labelled Chateau Jurine Bages at the time of the 1855 classification, later renamed in recognition of earlier owners the Lynch family. Jean-Charles Cazes purchased the property in the 1930s, later passing the management of the estate to his grandson Jean-Michel Cazes who modernised the winery and was a prolific spruiker of not just his own wines, but those of all Bordeaux throughout the 70s and beyond. Now managed by the next generation, (another Jean-Charles) Lynch-Bages continues to produce Cabernet Sauvignon-led wines of great concentration, offering ripe cassis and enviable cellaring potential.
