Handpicked and chilled for 16 hours before whole bunch press. Gently pressed directly to old French oak. Slow ferment 10 -12 days and kept on full solids for the life of the wine. Post fermentation, barrels were stirred weekly for 8 weeks. 6 months on full solids before bottling in October.
