Forty Spotted Rare Tasmanian Gin is hand distilled in small copper pot stills using the steeping method of Gin production and use of traditional botanicals of juniper berry, coriander and lemon peel creating a traditional London Dry style, but incorporating something a little bit special to give this Gin a unique finish.

First ever vodka in the world to be peat smoked. Using Tasmanian Peat from the North West Coast of Tasmania which has almost identical climate and weather conditions to that of Scotlands west coast. This spirit captures all of the unique qualities of our sheep whey vodka and infuses them with the pervasive character of Tasmanian peat smoke. This results in a balanced sipping Vodka. The spirit is divisive; yet elegant.

Poltergeist Gin is produced in small batches at the historic Shene Distillery in Pontville, Tasmania. Poltergeist Unfiltered retains the full flavour profile of all twelve botanicals, completely covering the front, middle and back of the pallet with a long lingering finish. It may ghost over ice due to the density of flavouring oils derived from the botanicals. The flavour profile is earthy and robust, and the balance of brawny botanicals like liquorice root, cardamom, orris root and Tasmanian pepper berries, with the more traditional citrus and nutty gin flavours, is unique. Drink it straight over ice, in a classic martini or a negroni.

Tasmanian Dry Gin, A classic London Dry style with a Tassie twist has 11 botanicals that hero the native pepperberries and herbs found on the way to Cradle Mountain. Wildly fragrant with alpine freshness, juniper, coriander and Tasmanian highland pepperberries with a hint of liquorice root.

LARK DISTILLERY Limited Release Christmas Cask Finish Single Malt Whisky 44% ABV, Tasmania

The first spirit in the World to be made from sheep whey and recent winner of Worlds Best Vodka (World Vodka Awards 2018) judged in London amongst the worlds leading Vodkas. Each Bottle is hand sprayed black and the label hand written and signed by Ryan Hartshorn (Head distiller) The spirit is made by fermenting the lactose sugar within the whey which is the waste from our sheep cheesery which is on the same farm where we milk our animals. Very Small 80-100 bottle batches. The spirit is unfiltered which is rare for a vodka. This means you will get a lot of character remaining from the whey which is a sweet nose and creamy mouth feel. This vodka is designed to drink straight at room temperature. Serve alone in a large aromatic glass or as a vodka martini with a pair of quality green olives.

Family owned Distillery located in Spring Bay Tasmania. Botanicals: 11 including 3 local botanicals (Native Bush Pepper, Lemon Myrtle, Tasmanian Wattleseed). Botanicals are steeped for 24 to 48 hours then additional Juniper and Liquorice Root are vapour infused in the neck of our copper pot still to give a traditional Juniper flavour at the front of the palate through to a sweet liquorice finish. This gin is triple distilled giving the spirit an ultra-smooth flavour despite the higher than normal ABV. Nose: Immediate sweet floral notes of juniper, liquorice and spice. Palate: From a bright and sweet juniper opening, the flavours build across the palate to include perfumed floral notes, bright citrus and a crescendo culminating in a big, warm and comforting glow of star anise and liquorice root. Finish: A round smooth mouthfeel from this oily spirit gives way to a fine clean finish of liquorice and spice.
