Woodchips produced on the Estate serves as ecological combustible.The cider is heated once for the first distillation. These cooled and condensed alcohol vapors are between 30 and 35% proof.The second heater is to distill the petites eaux. Only the heart of the distillation is retained. Calvados obtained is 70% proof.

In keeping with our heritage as a wine estate we use grapes for our base neutral spirit. We also add 10% of our Provence Rosé to the final macerate before distillation. The grapes add a round softness to the mouthfeel of our Gin. On the palate Mirabeau Dry Rosé Gin is juniper led with complex layers of citrus, floral and herbal tones all the evolve over time.
