Domaine Roux Saint-Aubin 1er Cru Jadis Blanc

This emblematic domain in Saint-Aubin is also a major producer in the Côte d’Or, and other quality areas of Burgundy. Their expertise has been handed down from father to son since the 19th century, along with groundbreaking work to help the appellation Saint-Aubin to shine. Domaine Roux was started in 1885 with a plot of vines bought by Louis Roux in the village of Saint-Aubin. His grandson Marcel Roux, born in 1927, played a pivotal role in the development of the domain, extending the holdings to over 25 hectares in Saint-Aubin, Chassagne-Montrachet, Puligny-Montrachet, Meursault and Santenay. He was a leading light in establishing the reputation and value of the Saint-Aubin appellation around the world. The Saint-Aubin appellation extends over an altitude vineyard that produces white wines of good quality, and whose reputation continues to grow. Its area is 1.6 square kilometres, on an area set back from those of Puligny and Chassagne. The wine landscape is very hilly and is therefore home to several climates with very variable exposures and soils. Local appellations and wines classified in Premier Cru are spread over four zones. This Saint-Aubin has a beautiful coloration with golden highlights. When young, it combines aromas of white flowers, flint, green almond, and orange-flower. Richer fragrances come with age: beeswax and honey, marzipan, ambergris, and cinnamon. This is a firm and flattering wine - it becomes fleshier and fuller with time. This is a wine with real breeding.

Domaine Bernard Defaix 1er Cru Montee de Tonnerre

Montée de Tonnerre is often regarded as the most complete of the Chablis Premier Crus, and Domaine Bernard Defaix has a long-standing reputation for producing serious, age-worthy wines from this site. Each year, the wine exhibits a clear saline line, with notes of citrus, fennel, and oyster shell on the nose, followed by a mouthful of white stone fruit, a mineral cut, and a long, tapering finish. It opens up well with time in bottle and comfortably rewards cellaring. For those who prize Chablis with both detail and drive, this is a benchmark example of the style and the Montée de Tonnerre vineyard.

Domaine Bernard Defaix 1er Cru Montmains

Domaine Bernard Defaix is a fourth-generation family estate with deep roots in the Chablis region. Their holdings in Montmains, one of the region's best-regarded Premier Cru sites, lie on Kimmeridgian clay-limestone soils and consistently produce wines of clarity and drive. The fruit is hand-harvested and fermented with native yeasts. A portion of the wine is aged in older oak barrels, while the rest is aged in stainless steel, striking a balance between structure and freshness. Each vintage shows the signature Montmains profile: citrus peel, oyster shell, and green apple on the nose, followed by a palate that's taut, stony and long. There's no excess weight here, just a clear line from vineyard to glass. Bernard Defaix's Chablis has become a dependable name for those who seek Premier Cru quality without the complications. A wine to enjoy now or cellar for several years, particularly in stronger vintages. Serve it cool, alongside shellfish or roast chicken.
