A new generation of vodka, stemmed from unique French know-how, produced and bottled in France, in the Cognac region, using Bolivian Quinoa seeds cultivated according to the methods of organic farming. English explorers coined the term allspice because the berry seemed to embody the flavors of cinnamon, nutmeg and clove all at once. On the Caribbean island of Jamaica, this distinctive aromatic liqueur has been produced for generations by macerating allspice in the finest Jamaican rum.

During the 18th century this elixir enabled Swedish doctor, Claus Samst, to heal the poor, vagrants, workers and anyone who had difficult lives. After much research and hours of hard work he compiled a manuscript describing 46 diseases that could be healed with this elixir. In 1821, Joseph Chavasse, founder of La Maison Dolin, saved the elixir from extinction by marketing it under the name Suédois Dolin in memory of the famous doctor. Its recipe has remained unchanged.

After the launch of Le Gin de Christian Douin in 2015, the only gin made from more than 30 varieties of cider apples and 7 herbs selected for their perfect combination of apple and juniper aromas, Guillaume Drouin has created a new blend dedicated to red fruits. Carmina is made with the same principles as the original version of Le Gin; each botanical or fruit is macerated and redistilled separately in order to optimise the extraction of aromas. The distillates are then blended before bottling. This time the bouquet is summery. It combines flowers and fruit with the use of raspberry, blackcurrant, elderflower, vanilla, lemon and orange in addition to juniper and cider apple varieties from Normandy.
