Abasolo El Whisky De Mexico Corn Whisky is crafted and distilled from 100% Mexican Cacahuazintle (kaka-wha-sint-lay) corn, which has been cultivated and passed down for more than 200 generations by local farmers for its distinct and extraordinary flavour. Abasolo uncovers the deepest flavours of this ancestral corn through nixtamalization, a 4,000-year-old cooking technique never before used in whisky production, but fundamental in preparing corn as food in Mexico. While American bourbon makers use at least 51% corn and a percentage of barley, the nixtamalization process allows Abasolo to use 100% corn to make whisky. The nixtamalization process also has a direct impact on flavour, causing the spirit to open up with more floral sweetness and warmth of the grain. Made from GMO-free corn this gluten-free whisky has deep, nuanced notes of roasted corn, honey, vanilla, black tea and leather. These flavours are developed from the ancestral corn through the nixtamalization process and these flavours are unlike any other whisky.

When a surge in popularity for the 12 year led to an inability to meet demand, it was removed from US shelves in 2016 (no surprise, age statements are now sought after). Typically made from a mash bill of 75% corn, 13% rye and 12% malted barley, rumour has it this contains a fair proportion of whiskeys in the 8-12 year old range.

A marriage of Wild Turkey 6, 8 and 12 year olds, Rare Breed is 'barrel proof', meaning that it is bottled at barrel strength with no water added to lower the proof or dilute the flavour. Master Distiller, Jimmy Russell follows suit even after bottling - he keeps his Rare Breed in the freezer so he doesn't have to add ice, which would melt and ultimately dilute the flavour! Unlike Bourbon or Rye, which, by definition, must be aged in new oak barrels, our US1 Unblended American Whiskey is aged in a way that utilizes whiskey-soaked barrels to achieve a rich and unique flavor profile. In late 2013, then Master Distiller Willie Pratt agreed to re- release our US1 Unblended American Whiskey after a nearly three- year absence from the market, deeming it "just right" and "the best it's ever been." Crucially, our US1 Unblended American Whiskey never contains grain neutral spirits - hence its "unblended" distinction. This Whiskey has deep butterscotch and vanilla notes, hints of caramel and dried fruit with a ripened fruit finish.

Rather than being simply a ‘finished’ whiskey, Yellow Spot is special in that it contains whiskey that has been matured for a full 12 year period in three oak cask types: American bourbon barrels, Spanish sherry butts, and uniquely, Spanish Malaga casks. The Malaga cask brings an exotic sweet note to the whiskey making it a truly delightful taste experience. Only extremely limited quantities of Yellow Spot have been bottled making it a whiskey to seek out and savour as a true rarity. While Green Spot is often described as tasting like green apples, Yellow Spot is more in character with juicy red apples.
