The result is a surprisingly sweet and smoky dram that blends rich caramel and spice notes with fresh green fruit and soft pillowy smoke. Our Cotswolds Single Malt Whisky is the first whisky ever distilled in the Cotswolds. The El Dorado 12 Year Old has been awarded a gold medal at the International Wine and Spirit awards for 8 years running. A blend of specially selected aged rums, it is a combination of the Enmore and Diamond Coffey stills and the Port Mourant double wooden pot still, blended to perfection. A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. Our own interpretation of an old style of gin popular in the 18th century, when strict licensing made it difficult to make and sell gin. The image of a tomcat hung outside a door indicated that this was an illegal distillery. Our classic London Dry Gin base remains, however the addition of Yorkshire liquorice creates a sweeter more mellowed gin.
