'Devil's Lair winery was considered a boutique winery until not that long ago. In recent years it has evolved to become one of the heavy weights of the Margaret River region. The winery's quirky name derives from an archaeological dig site on the property that unearthed an ancient Tasmanian Devil fossil. From the year that Devil's Lair's entry level wines earned accolades at Royal Society shows, I was expecting big things, and this wine doesn't disappoint. The wine's characters are intense, lean and focussed. Notes of strawberry jam, mulberry and blackcurrant. The Devil's Lair Cabernet Sauvignon is built for comfort, not speed. Rich purple/red with a vibrant purple rim. Distinctly Margaret River; driven by aromas of blackberry, plum, bay leaf and a touch of black olive. The Merlot and Malbec add texture, balance, length and a luxurious fragrance to create a seamless and unique red. A dry, warm season was punctuated with a tropical rain event in January. This pushed back harvest and allowed for better balance during ripening. The resultant fruit had wonderful thick skins, incredible concentration and excellent varietal identity. The Cabernet was harvested late-morning, to ensure the fruit reached the winery warm to ensure a healthy, even fermentation. The Merlot and Malbec fruit was harvested during the cool of the early morning so it could be cold soaked on skins for 5 days prior to fermentation. The selectively harvested fruit was fermented over 10 days, with the Merlot and Malbec undergoing partial wild fermentation. The Cabernet remained on skins for 20 days to ensure a beautiful, vibrant colour. All elements were then matured in French oak for up to 15 months. Each individual barrel was assessed to determine which were included in the final blend.

Fruit tannin and bold flavours of mulberries and wet slate. A focused core of fine textures and glazed cherries culminates in a mineral and persistent finish.

STELLA BELLA WINES Cabernet Sauvignon, Margaret River

A blend of 98% Cabernet Sauvignon and 2% Malbec matured in a combination of new and used French oak barriques for 15 months. Totally opaque black dark red colour with a dark red hue. Lifted red to black currant and mulberry aromas are intermeshed with black olive, spicy cedar, tobacco and bay leaf notes. Medium bodied the palate features a mix of ripe red currant and mulberry fruits over cedary tobacco characters, dusty earth and spicy bay leaf. Fine yet nicely structured tannins with a refined mid length conclusion. Drink over the next 6-8 years. Alc. 13.5%
