The Cullen Amber Semillon Sauvignon Blanc is the first Amber wine made from Cullen Wines. It is a blend of Semillon and Sauvignon Blanc coming from our certified Biodynamic vineyards. The idea behind this wine was to make a white wine like a red.

The juicy grapes used to produce Best Blocks Cabernet Sauvignon were harvested, and crushed into stainless steel fermenters. The juice obtained was pumped over and left on skins. This deep red-hued Cabernet Sauvignon showcases a brick red haze. The aromatic nose flaunts pleasing scents of ripe berries and dry herbs such as aniseed and sage. These fragrances make way for a rich and soft palate filled with concentrated fruit flavours and balanced tannins. This full-bodied Cab Sauv ends in an elegant, yet powerful and long finish. Made for consumption upon release, this mouth watering red wine has the potential to be cellared for six years. It tastes fantastic with mustard and herb crusted rack of lamb, served with sautéed vegetables.

Margaret River is renowned for its premium Cabernet Sauvignons. This example emanates from this multi star rated Halliday Winery in the Yallingup Sub-Region. A fine balanced wine, with a long palate that shows finesse.Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. This is a classic Wilyabrup Cabernet – but with a twist. Rather than crafting a cabernet with massive architecture, we wanted to table a wine that dispensed with a poignant tannic structure, yet still delivered on the beauty that is Cabernet from this region.

Elegant flavours of dark cherry and star anise are supported by sweet tannins, the typical line and length of this variety enhanced by a fine backbone of cedary mocha oak.

Devil’s Lair Cabernet Sauvignon is complex and layered, characteristic Margaret River lively aromas, fine tannins and subtle oak characteristics. The Devil’s Lair Cabernet shows primary blackberry fruit aromas with a deep core of dark cassis, ironstone minerality and abundant yet supple tannins. The fruit is the work of Viticulturist Simon Robertson who has guided growing at Devil’s Lair vineyards for more than 20 years. The wine spends more than a year on 100% French oak both old and new.
