The Isle of Skye is the birthplace of the heralded Scotch Whisky house of Talisker. And it is this island that gives this remarkable and unique whisky its distinctive character. Established in 1887, Glenfiddich, Gaelic for Valley of the Deer, is one of the few single malt distilleries to remain entirely family owned. The 12 Year Old is their signature expression and is the perfect example of Glenfiddichs unique Speyside style, widely proclaimed as the 'best dram in the valley'. Dewars 18 Year Old Scotch Whisky is carefully prepared by putting the whisky back into the cask to mature a second time after blending (double-aging). This method allows all of the older and characterful whiskies to mingle before bottling with resulting flavours of nut and marzipan, to name a few.

Aged in ex-bourbon casks before being finished in sherry casks. Double Wood is an excellent example of what the Balvenie distillery can craft, even at 12 years.

Laphroaig, founded in 1815 by brothers Donald and Alexander Johnston, has an extremely rich history; neighbourly disputes with Lagavulin and many ownership changes to name a couple. The 10 Year Old Single Malt is Laphroaig's signature malt that is full sparkling gold in colour and has that signature rich smoke and seaweed character with a hint of sweetness. Surprisingly the palate is rich with subtle sweet hints and complex layers of salt and peatiness that evolve on the palate and continue to the long and dry finish.

Yoichi Single Malt is described as bold and strong. Pleasant peaty notes and smokiness originate from traditional direct coal-fired distillation accented with a briny hint delivered by the sea breeze during the ageing process.

The 12 year old expression is a fine example of how the distinctively crisp, citrus character of Aberlours raw spirit is deftly softened by double cask maturation. Traditional oak and seasoned Sherry butts are both used to great effect as the mellowed spirits within are combined to deliver a subtly balanced flavour.

Chivas Regal 18 Year Old has been created by using whiskies matured for at least 18 years which has resulted in this very special Whisky. Exceptional richness with aromas of buttery toffee, dark chocolate and dried fruit. Hints of spices and smoke combine to produce a long, warm finish.

The Quarter Cask is a strong, double cask matured, non-chill filtered malt from the iconic Islay distillery, Laphroaig. With a nose of burning peat embers and hints of coconut and bananas that is then followed by a palate that is deep and complex with smoky flavours. Still quite gentle with a hint of sweetness, this 48% Single Malt has a long, spicy and smoky finish that seems to last an eternity.

With a wholemeal and honey quality to the nose and the odd smoky tangent. A sweet, fruity core and a long round finish. Dalwhinnie has a little bit of everything, peat, honey and backbone. A classic malt for everyone.

A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice.
