Chapel Hill's Michael Fragos loves using The Parson Shiraz to showcase McLarenVale's diversity and varietal character. The Shallow soils over livestone in maritime influenced vineyards between McLaren Vale and Masline Beach and also around Bowering Hill, provide explosive blueberries and liquorice with finesse and a wonderfully framing tannin structure. Yellow Tail Cabernet Sauvignon is a bright red colour with a fragrant nose of primary red fruits and blackcurrants. Aromas of crushed blackberries with sweet mocha also fill the nose. Brimming with rich blackcurrant fruit and sour cherry flavours, the wine is mid-weight and displays a soft velvety finish.

The Parson GSM is a traditional take on three of McLaren Vale's most important and historical varieties. The wine displays hints of rosemary and aniseed the nose. The big palate is layered with liquorice and dark chocolate flavours that are beautifully interwoven into the textured firm tannin structure.

The Bare Touch wines are made by Cowpunk winemaker Aaron Mercer using early picked grapes, free run juice and a “hands off” non intervention approach. The grapes are naturally lower in alcohol and with far less skin contact than a traditional red wine, the free run juice is bright and vibrant with significantly lower tannins. The hands off winemaking approach allows the fruit to express itself fully whilst building complexity. The result is a range of fresh and elegant wines with a sleek, supple mouthfeel that are perfect to be served with a moderate chill or straight from the fridge.

Savoury and slightly earthy notes combine on the nose with attractive dark cherry aromas. The berry flavours are long on the palate and smoothly textured, finishing with light but persistent tannins.

Logan's Apple Tree Flat wines pay homage to the people, places and experiences of the Logan winery on the label, but also within the bottle.
