Ink Dry Gin was created in the Northern Rivers of NSW after a global voyage of botanical discovery. Gin made at the Glen Ewin Estate Adelaide Hills (South Australia). Willa, the owner of the farm owns 12000 fig trees. 25 years chemical free, Estate grown Figs poached gently to extract the sweet fig aroma, essence, and earthiness. The gin botanicals and spirit show early on the nose with all the fig showing on the palate. Pour over ice and enjoy or add some lime for a flavor explosion, a perfect balance of sweetness and acidity which stretches the profile, then add a little good tonic to create the perfect G&T.

A new approach to the classic spirit, Affinity gin. Juniper forward, semi-sweet citrus, floral tones, hints of Christmas spice, naturally sweet with a warm well rounded finish to create a harmonious sipping experience from start to finish.

The West Winds Gin story began back in 2009 when two mates (James Clarke and Paul 'The Doctor' White) hatched a plan to create unique styles of Australian gin using local and imported botanicals that would be cut with triple filtered Margaret River rain water. Within a month of launching, The West Winds had already made a strong impression on the gin world, winning numerous accolades at the 2011 San Francisco International Spirit Awards. 'The Sabre' - a Gold medal winner from said awards - presents a traditional British style gin led by underlying citrus and a dominance of juniper, followed by the classic coriander seed. The addition of wattle seed adds a depth to the mid palate and introduces a creamy texture without the need for artificial additions. Best served with lemon and tonic or fresh watermelon juice.
