Four Pillars sourced olive leaf and olive oil from Cobram Estate, in northern Victoria after visiting Cobram Estate during olive harvest. Using olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. This gin is savoury, textural and bright. Perfect for any Martini Gibson, dirty, or dry with a twist. For a longer drink try it in a Spanish-inspired gin & tonic, with rosemary and lemon!

The Woodcutter is a unique gin that boldly stands on its own. It is distilled using locally grown lemons and limes and backed by notes of lemon myrtle. Medium toasted French oak spirals are added to the gin post distillation. The oak balances the botanicals creating The Woodcutters smooth caramel finish and honey like colout - the oak is also the basis of the Woodcutter game. HM 2022 Pinot Noir Gin has been hand crafted by steeping hand picked single vineyard Victorian Pinot Noir grapes with our famous HM No 6 Rare Dry Gin. At the completion of the steeping process the grapes were separated from the resultant gin and then hand pressed to extract all remaining juice. The juice was combined with the gin to ensure that none of the mouth-watering juices were spared and to give the gin it’s warm rich colour. We are beyond proud of HM 2022 Pinot Noir gin. It is elegant and aromatic, has great depth of flavour on the palate and is incredibly smooth. Those lucky enough to have tasted the pre release samples have scored this gin a ten out of ten. Crystal clear with a pale pink blush. Sweet and perfumed - sort of in the Old Tom style. Pleasing scents of candied citrus peel combine with hints of anise, ginger, coriander, juniper and pine sap. A creamy entry leads into a semi-sweet mid palate featuring citrus peel, hints of juniper and pepper. Concludes drier with a juniper and pepper aftertaste followed by a brisk grapefruit like fade. It can be served as an aperitif served with Tonic water or added to specific cocktails.
