Four Pillars Olive Gin
Four Pillars sourced olive leaf and olive oil from Cobram Estate, in northern Victoria after visiting Cobram Estate during olive harvest. Using olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. This gin is savoury, textural and bright. Perfect for any Martini Gibson, dirty, or dry with a twist. For a longer drink try it in a Spanish-inspired gin & tonic, with rosemary and lemon!
Brookie's Shirl the Pearl Cumquat Gin
Shirl the Pearl 2020 Harvest, a seasonal edition Cumquat Gin with fresh uplifting notes, zesty characteristics, and a long finish. Expect refreshing waves of orange blossom. Eddie’s grandmother Shirley aka ‘Shirl the Pearl’ was a pocket rocket. Adventurer, skier, and one of Australia’s first female pilots, Shirl also made a mean bootleg Cumquat Gin. Inspired by Shirl, we steep locally grown Cumquats in our Brookie’s Dry Gin for several months and balance the spirit to create springtime in a glass! This is her recipe and an ode to Shirl the Pearl.
Big Tree Distillery Elegant Dry Gin
Deliciously smooth, with citrus and juniper this is Big Tree's traditional GiN. Traditional in flavour, making a good well rounded G&T. Beautifully aromatic and smooth the Elegant Dry Gin is our classic shout out to the London Dry Gin style. Made on the farm in the Macedon Ranges 16,833km away from London. Full of flavour with floral notes, well-rounded and balanced that is just lovely in a G&T.Made with fresh rain water collected off the farm, juniper, orange peel, cardamom, orris root, cassia bark, coriander, star anise and angelica.Serve as a G&T using a good quality tonic with either a slice of dehydrated blood orange or a twill of fresh orange peel and ice.
Brogan's Way Royal Blood Gin
Distilled in Melbourne. Brogans Royal Blood Gin is the savoury sensation that is her navy strength gin. Something a bit special, complex with a lingering cardamom heat, at 57.2% it has a bit of a kick. Herbal aromas and flavours from the rosemary and bay leaf are seasoned with Australian sea parsley, saltbush and roasted wattle seed giving plenty of good mouthfeel. Tasting Note Juniper forward, dry, slightly citrus, and extremely savoury. With herbal and aromatic characters of fresh vapour distilled rosemary leaf, supported by bay leaf, olive leaf and black peppercorns, that are amplified by the Australian natives of spicy mountain pepper leaf, fragrant and savoury salt bush and salty sea parsley. A bold amount of roasted native wattle seeds lengthens the finish and exaggerates the heat of green cardamom. A winner in a dry Martini and a Dirty G&T with a slice of apple to garnish.
