The gateway to double cask maturation, Aberlour 12 year old double cask matured has balanced notes of fruits and spices. Golden amber with hints of ruby red. Soft and rounded with fruity notes of red apples. Sherried character and fruity aromas balanced with a rich chocolate, toffee, cinnamon and ginger spices. Warming and lingering with some smoky notes and gentle pepperiness.

Del Maguey Chichicapa Mezcal

Chichicapa has a medium nose and a complex taste with lots of citrus and a long, smooth finish with overtones of mint and smoke. The pueblo elevation is 5052 ft. (1540 meters) in a broad valley with a desert and tropical micro-climate. Village: Chichicapa. 100% Espadin agave, roasted for 4-5 days.

QuiQuiRiQui Pechuga Destilado con Mole Mezcal

Pechuga Mezcal is produced when a finished mezcal is redistilled with grains, nuts, local fruits, and a raw piece of protein (usually chicken) is hung over the still, cooking in the emanating vapours. This style of mezcal is traditionally produced for special occasions and consumed locally. QuiQuiRiQui Pechuga Mole Mezcal is vegetarian-friendly recipe trading the poultry for a homemade mole paste. The final product is a clear liquid. The nose hints of sappy, sweet, rubbery, herbal aromas with a smokey edge. The palate is of char-grilled capsicum, spent pipe tobacco, exotic agave and white pepper flavours. It finish with a lingering wood smoke. Quiquiriqui Mezcals are all Single Estate (Palenque) handcrafted spirits produced in Mexico. Established in 2011, they partner directly with families who have been producing traditional mezcal in their communities for generations. Their Mezcals are made to order in small batches using agave plants, picked only when fully mature, then cooked, wild fermented and distilled in alembic 350lts stills using the families time honoured traditional methods.

Koch El Mezcal Artesanal-Maguey Tobala is produced in the town of San Baltzazr Guelvila in Oaxaca. This Mezcal has aromas of a fresh ocean breeze followed by coconut milk, celery, hazelnut and starfruit. Herbal notes of oregano, thai basil, roasted pineapple and cedar. The palate is slightly with a combination of fruits blending with cocoa bins and walnuts, with a slight spice on the finish. Trascendente Mezcal Artesanal Blanco Ensamble

Double distilled from a 100% agave this Mezcal is an ensemble that has been blended from three distinct varieties of agave, Maguey Espadin, Tobala and Cuishe. Maguey Espadin is the most common varietal grown for producing mezcal, it has a moderate sweetness and gentle herbal and citrus flavours. Maguey Tobala is a smaller variety that also takes years longer to mature, it is significantly sweeter and holds more delicate floral and spice notes. Maguey Cuishe yields intensely flavoured mezcals with minerality and spice. This Mezcal is made as a balance between the three varietals and designed to be sipped, showing a sweet floral minerality with subtle smoky notes on the nose and a fresh herbal palate with a honey like sweetness, it pairs well with chocolate and citrus fruits.
