Taking inspiration from those great Tennessee Whiskeys and Kentucky Bourbons comes Australias first version of a sour mash whiskey. Using a classic grain bill of corn, rye and malted barley, sourced entirely from Western Australia, our full flavoured sour mash is bursting with tones of vanilla, caramel and hazelnuts. This mixed grain whiskey is richly textured with elegant spices and fruit with a smooth creamy finish. Each barrel is hand bottled and numbered in keeping with our small batch tradition.

Since inception in 1881, Bunnahabhain has been producing an Islay malt a little different from most. By not heavily peating their malted barley, the resulting whisky is a clean, pure and distinctive malt. Embodying the 'gentle taste of Islay', Bunnahabhain 12 Year Old is an approachable, welcoming whisky. Ex-sherry cask influence and being non-chill filtered add to the layers of complexity exuding from this premium whisky.

Lark Tasmanian Single Malt Whisky is proudly unique in character and style. The Quarter Cask is a strong, double cask matured, non-chill filtered malt from the iconic Islay distillery, Laphroaig. With a nose of burning peat embers and hints of coconut and bananas that is then followed by a palate that is deep and complex with smoky flavours. Still quite gentle with a hint of sweetness, this 48% Single Malt has a long, spicy and smoky finish that seems to last an eternity.

Jack Daniel's is one of the very few Tennessee Whiskies that is charcoal mellowed. Jack Daniel's has a smooth aroma and flavour of vanilla, toasted oak and caramel translates well to the palate. Matured in port puncheons, Limeburners Whisky is aged for up to 8 years. The resulting single malt is all spice and fruit with aromas of port and vanilla on the nose, barley, honey, raisins and caramel on the palate and finishes smooth.

Released to commemorate the 200th anniversary of the founding of Lagavulin distillery by John Johnston in 1816, this eight-year-old is big and smoky, with sweet spice that becomes apparent with a drop of water. Inspired by the visit of Alfred Barnard to the distillery in the 1880's when he tried an 'exceptionally fine' eight-year-old from the distillery, this is a fitting tribute for the milestone.
