Zilzie's Cabernet Sauvignon has generous layers of rich dark berry fruits, delicate tannins and an elegant touch of oak. The palate of menthol and mint are balanced by ripe blackcurrant and plum. Tannins are mature and rounded which will support further aging. It is ideal for cured meats such as salami and prosciutto, as well as soft cheeses. As in the vineyard, the wine is hand crafted using traditional methods including a 25% whole bunch indigenous fermentation and hand plunging. Maturation is in French barriques for 11 months, using a mix of older and new (25%) barrels.
