Hand picked grapes from cool climate vineyards in the King Valley and Tumbarumba were used to craft a methode traditionelle sparkling wine of the highest quality. Lifted aromas of green apple and citrus on the nose, and after extended time on lees the palate is soft and creamy with brioche characters.

Dal Zotto Sangiovese is mid garnet with a purple hue; the savoury bouquet is immediately reminiscent of Tuscany with briary red fruits, sour cherry in particular, sage and thyme and a little earthy complexity adding interest; the palate is medium-bodied and fleshy on entry, with the crunchy tannin and acid of the variety providing an engaging and savoury platform to conclude; will handle a huge array of flavours, from light to full blooded.

Pucino is the ancient Roman name for Prosecco. Dal Zotto recreate that ancient style here by using the charmat method to delivery a Prosecco of true richness and complexity that is perfectly suited to a wide array of occasions. Enjoy as an aperitif or alongside some freshly shucked oysters.

“A premium prosecco – why not? A drier prosecco than usual, bringing gravitas to the style, with a smarter, tighter line and length. No simple lemonade characters here, but rather some depth in aroma and flavour. Granny Smith apples, grapefruit, pear skin, preserved lemon. Initial aromas for this Prosecco by Pizzini include yeasty and melon notes, as the wine opens up in the glass the nose smacks of citrus blossom, fresh lime, Wisteria flower and green apples. It is refreshingly fizzy with gentle, lemony acidity.

Col Fondo Prosecco undergoes secondary fermentation in bottle and isnt disgorged. The flavoursome leesy sediment dances on the bottom, hence col fondo, literally meaning from the bottom. This is how Italian prosecco used to be crafted before industrialisation turned it into mostly cheap fizz made in stainless steel tanks. This is complex, refreshing, lightly fizzy with plenty of acidity keeping it alive and kicking.

The colour is bright and vibrant with a youthful green hue. The nose shows lifted granny smith apple and pear notes along with a citrus undertone. The wine's tight natural acidity from the cool climate fruit make it perfect drinking young while at its light and delicate best.
