TASTING NOTES Beautiful pale colour with lime-green highlights. The nose features broom flower and citrus (lemon) aromas, with pronounced minerality and notes of vanilla and brioche from barrel-ageing. The palate is incredibly well balanced, displaying good freshness, as well as lovely volume and body. The aromatic complexity is dominated by citrus notes (grapefruit zest) and oak. The aftertaste is wonderfully long. FOOD & WINE PAIRINGS Oysters, white asparagus from Blaye with herb mousseline, grilled salmon, poultry in sauce, scallops, sweetbreads, and veal chops.

Spinifex Rose

Vinification is simple and centred around preserving the delicacy, freshness and vitality found in early picked old vine fruit. This Spinifex Rose consists of Grenache (52%), Cinsault (30 %), Mataro (14%) and Ugni blanc (4%). Bunches from mature (averaging 65 years of age) dry drown vineyards are hand harvested and the crushed and left to macerate for between 4 and 48 hrs prior to pressing.

Aged in French oak, 40% of which was new, for one year. Delicious to serve with veal, lamb or beef today, but will also reward up to 10 years in the cellar.
