Billy Goats, our Queensland Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals. We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth. Using the distillery's 120 years of rum-making expertise, the master craftsmen have searched our two-year old Bundaberg Rum reserves and selected a vat that was producing a rum with extra special characteristics. The Brandy is distilled according to the time honoured Pot Still process from specially prepared wine and then matured for long years in small oak barrels to ensure its pure clean perfection.
