The grapes used to craft The Katana Chardonnay were handpicked, chilled overnight, and whole bunch pressed. The juice was rough settled, and transferred to French oak barriques for fermentation. This process led to the creation of a pale straw coloured wine with golden yellow highlights along the edges. This wonderful Chardonnay presents a supple core of citrus blossom and white stone fruit characters, enhanced by mineral notes. The juicy palate contains flavours of bright fruits and French oak supported by crisp acidity, ending in a lively and captivating climax. Geoff Weaver has journeyed from the big end of town to a tiny, intimate pocket of the Adelaide Hills. From his role as chief winemaker for the Hardy group of companies, in 1992 he made the break from corporate winemaking to pursue his own dream on the Lenswood vineyard that he and wife Judith had started planting a decade earlier. Those vines, some of the oldest in the Hills, are really reaping the rewards of maturity. Tightly structured yet aromatically lifted wine but with a supple mid-palate and a fine, crisp finish. The nose is fresh and lively with a lifted aroma of lime blossom. The palate is fruity with a juicy zest and a fine mineral edge.
