The two main components of our Vodka; water & grain spirit were meticulously selected from local produce, based on their aromatic intensity, richness, structure.Water was sourced from pristine Blue Mountains ranges in New South Wales which is specifically high in Zinc giving Ancient Wisdom Vodka its unique viscous silky taste.While the wheat grain strain selected is explicitly grown in winter in the high moisture-storing capacity of the clay-based soils of southern Queensland, which plays a significant part in imparting a delicate earthy nose.The vodka is then triple distilled before being gravity fed through Silver and heavily charred Oakwood to achieve the desired viscous mid-palate imparting a lingering earthy finish. This special technique retains the refined phenolics and raw aromatics leading to a smooth, succulent finish.Distilled botanicals are then aged in 4-year-old x-Chardonnay Barrels for several months for added texture and to advance the integration of oak tannins with herbal phenolics.With a hand on heart, I can say that this is an exceptional drop. Banks Botanicals is a distilled organic, non-alcoholic spirit that uses Australian botanical ingredients from Victoria’s Yarra Valley. Five native botanicals in the mix, make for a rich and sophisticated flavour profile. Organic. 100% locally sourced. For us, it’s all about the flavour. We use mountain-fresh Yarra Valley water to combine the distinctive cinnamon notes of cassia with the fresh high notes of lemon myrtle and lime. Add to this the wattleseed, which brings a nutty, roasted taste, then the spice of the wild Tasmanian pepperberry and you have a strong, memorable finish that lingers long after the final sip.

Our Crossover Gin is where the Italian garden meets Australian bushland with the perfect union of traditional Italian and Australian native botanicals. A juniper forward gin with hints of thyme, rosemary,olive leaf, native basil, macadamia nuts and lemon myrtle.

This Chardonnay Pinot noir sparkling wine from Airlie Bank has aromas of citrus fruits and subtle apricot, complemented by a doughy, bready complexity. Fresh and vibrant with a focused palate structure of apple blossom and citrus characters with complex brioche notes.
