The unifying factors of all these sites are their cool, windy climates and marine-based soils. La Crema's vineyards are all harvested by hand in the cooler morning hours. The winemaking techniques are primarily traditional with modern enhancements to ensure that the wines are true to both the variety and the terroir. Chardonnays are whole-cluster pressed and fermented and aged in French oak on the lees with bi-monthly battonage to add texture and complexity. The Pinot Noirs are cold soaked for five to eight days before fermentation in small, open-top fermenters and aged in a combination of new and used French oak barrels. As with the Chardonnay, La Crema's Pinot Noirs are pure, accurate and reflective of their origin. Outstanding vineyard sources, limited yields and artisanal wine making produce wines that receive high acclaim.

Hand-crafted from a single vineyard site, The Paringa is a Pinot Noir of utmost class, pedigree and intensity. Made from specifically selected barrels of Pinot Noir that were clearly superior at the time of blending and bottling, the wine is a powerful amalgamation of spice, cherry and charry oak characters with a palate of extreme persistence and integrity. Two vineyards were established in the Bendigo sub-region: The Prophets Rock Home Vineyard and, subsequently, the Rocky Point. Both are steep and elevated, and each is distinctive The Home Vineyard with its rare mix of soils, including schist, clay and chalk, and Rocky Point with its stony ground and almost treacherous slopes. Rich ruby in colour, displaying red berry fruit, spice and floral aromas on the nose leading on to an elegant well-structured, mineral driven palate. The rich aromatics are accompanied by silky tannin and well-balanced acidity leading on to a long finish. This wine will reward cellaring over the next 6-10+ years from vintage.

Applejack Vineyard was planted by highly respected viticulturist Ray Guerin and is managed by his son Mark. Burn Cottage Vineyard Moonlight Race Pinot Noir. A myriad of mulberry, wild thyme and enticing savoury undertones are interwoven with layers of ripe summer berries. The palate displays both generosity and restraint, with plump and supple tannins that are supported by an amalgam of summer ripened plums, dark cherry and a freshness reminiscent of ripe red fruits. The finish is long, the wine showing lovely fruit purity and definition.
