The Torbreck Descendant has a powerful nose of blackberry and tar complemented by floral lavender and a violet lift. Full-bodied and concentrated with ripe silky tannins and plenty of extract this wine has a great future ahead.

The Barossa is home to some of the world’s oldest ungrafted Shiraz vines. The vines were planted in a pre-mechanized and pre-irrigation era where site selection was everything. Dry grown as bush vines with only the best soils, vine material and sites surviving the first years, and only the absolute pinnacle surviving the 100 years thereafter. The low-yielding ‘Centenarian’ vines, noted for their intensity of flavour, were planted more than a century ago around the time construction of the Château itself began. The select parcels are hand-picked and fermented in small open fermenters with hand plunging four times daily before careful basket pressing to extract tannin and colour. This iconic label by Yalumba has a proud history from it's first release in 1962. Quite possibly the quintessential Australian Shiraz Cabernet blend, 'The Sig' shows vibrant Barossa aromas of dark fruit and spice and a concentrated palate that is long and deeply flavoured. With the ability to age wonderfully well, The Signature is a deserving part of any wine aficionado's collection.

Teusner Albert Shiraz is made from old vines in the northern Barossa; rich black fruits and tarry cassis with smoky undertones, the finish is long and luscious. Could easily be cellared for the medium term.

Coming from one of the best vintages in recent Barossa history, the Old Block from St Hallett shows what careful vineyard management can do for a wine. Rich, dark and conerntrated but with seamless tannin intergration.

St Henri is a time-honoured and alternative expression of shiraz, and an intriguing counterpoint to Grange. It is unusual amongst high quality Australian red wines as it does not rely on any new oak. Released for the first time by Penfolds in the early 1950s (first commercial vintage 1957), it gained a new lease of life in the 1990s as its quality and distinctive style became better understood. Proudly, a wine style that hasnt succumbed to the dictates of fashion or commerce. St Henri is rich and plush when young, gaining soft, earthy, mocha-like characters with age. It is matured in an assortment of old large vats that allow the wine to develop, imparting minimal, if any oak character. Although a small proportion of cabernet may sneak into the blend, the focal point for St Henri remains shiraz.

Dark purple red in colour, the nose coconut fudge and chocolate plump, the palate very full bodied and large with fine tannins and a warm finish. Soul Growers' fruit is destemmed in open fermenters that hold anywhere from half a tonne, to five tonnes. After seven to ten days of fermentation the fermenters are drained and placed by hand into basket presses. The fruit is then gently pressed for about 18 hours to ensure the flavour and aromas are carefully extracted without releasing harsh and bitter tannins.After pressing, the winemakers settle the wine in tanks before filling the barrels ready for ageing. The winery's renowned reds generally spend 18 to 24 months on oak. To round off the process, each individual barrel is blended and benchmarked prior to being settled in bottles, without any fining or filtration.

Elderton's Command Shiraz is one old school Barossa Shiraz. Named because of the special treatment the quality fruit 'commanded', this is a Shiraz of foreboding concentration. The fruit for this 'Excellent' Langton's classified Australian icon comes from the century old Elderton vineyard located on the banks of the Para River and is matured in a mixture of French and American oak. This allows the wine to retain its driven power while also giving the wine a level of complexity and balance unique to this region and producer. Elderton's Command can be enjoyed by lovers of ripe and rich fruit early, yet will reward the truly patient with a wine of true beauty when left alone to mature for a decade.
