Pegasus Bay have about a dozen different clones of Pinot Noir. With their original plantings, these grow intermingled throughout the various blocks. The vines, many of which are nearly 30 years old and on their own roots, grow on a series of north facing, gradually descending terraces. Traditional Burgundian winemaking methods are used. Bright ruby colour. Its generous aromas and flavours dark cherries, blackberries, raspberries and mulberries, suffused with chocolate mocha and spice. There is an underlying savoury character, suggesting grilled meats and mushrooms with a hint of black olive tapenade. It is seductively light on entry but rapidly expands on the palate to become rich and mouth filling, while retaining elegance and poise. Silky tannins help draw out its lingering aftertaste.

Château Clinet is a rising star in the small Right Bank region of Pomerol. With its gravely soil mixed with sand, Château Clinet has gradually increased the Merlot component of the wine to produce a voluptuous, smooth and yet still complex red wine that is both pleasing upon release and turns into a read star with a few years in the cellar.

For this Grenache blend, grapes are hand-picked, with double sorting at the vine, followed by a third sorting at the winery. Gentle crushing and selective destemming, followed by 25-40 days' traditional fermentation in temperature-controlled stainless-steel and wooden vats. Pneumatic pressing, then systematic malolactic fermentation. A classic red Châteauneuf-du-Pape by Domaine du Vieux Telegraphe, very fine and elegant. The best vintages will age for 25 years and more.

First produced in 1911. The fruit for Massolino's classic Nebbiolo cuvée is selected from seven sites, representing roughly seven hectares of prime-sited Serralunga vineyards. The oldest vines that feed this bottling are 55 years old (the youngest are 10), and it spends 24 months in large Slovenian oak (only).

Noon Winery has become a cult figure in the wine world due to their opulent red wines that are known for their concentration and power. Their Reserve Shiraz is so highly thought of, it sits in the Outstanding category in Langton's Classification of Australian Wine. With fruit sourced from the '20 Rows' block in Langhorne Creek owned by the Borrett family, this is a Shiraz of serious weight and body. In the 1950s, the father of current winemaker Paolo di Marchi purchased the adjoining hamlets of Isole and Olena and their estates in the Tuscan commune of Barberino Val d'Elsa. The concept and style of Cepparello was developed by Paolo De Marchi over a period beginning in the mid 1970's. This Sangiovese wine is named after a small stream, Borro Cepparello, originating in the highest point of the vineyards on the Isole e Olena estate.

The Torbreck Les Amis Grenache is aged for 18 months in new oak and is a remarkably fragrant wine that shows abundant aromas of spice, cherry and wild raspberry. Textured and plush on the palate, it evolves into layers of blackberry and red currants with firm, ripe tannins. David Powell continues to lead this formidable Barossa wine estate to truly remarkable heights.

Left in a sorry state by the previous owners, in 1962 the Rothschilds of Lafite took over the property and begun to reconstruct the vineyard which was planted mostly to Petit Verdot. 4 decades later and the wines of Château Duhart-Milon are now showing the flavour and concentration you expect from such a site in Pauillac.

Coonawarra is regarded as Australia's premier region for Cabernet Sauvignon. The Reschke properties are located on the famous strip of 'terra rossa' soil in Coonawarra and has been owned by the family for almost 100 years. The fruit selected for Empyrean is the best on their 10.8 acre site and is only made in exceptional years.
